In China, you often see tea eggs at food stores and subway stations. Their special smell makes people stop. This simple snack shows Chinese cooking wisdom. People turn ordinary eggs into something wonderful.
Making tea eggs needs four important steps. First, they boil (煮) fresh eggs until they become hard. Then, they take a spoon and tap each egg to make many small cracks (裂缝). This is the most important step—the cracks need to be everywhere, but the shells (壳) have to stay on.
