Recent research explores what it takes to be greater than others in fields, from sports to chess to classical music. Somewhat against common sense, people who showed the greatest promise in their area as children rarely went on to reach the peak (顶峰) as adults. Psychologist Brooke Macna says that the findings blow up “the 10,000-hour rule”, the idea that if someone spends 10,000 hours on purpose practicing a skill, they will master it. The rule is based on a former study of top-performing violin students. These students had each built up an average of 10,000 hours of practice by age 20. Yet they were not world-class performers. “Compared with national-class counterparts (对手), world-class performers often started their field later,” Macna explains. These people tend to engage in various activities early on and don’t shine in one thing at a particularly young age. They have less practice in their field and more practice in others and then rise to the top relatively late. “This pattern doesn’t follow the idea of the focused practice theory or the 10,000-hour rule, both of which suggest that starting early and making full use of focused practice is the path to top-level performance,” Macna adds. The researcher highlights that the findings aren’t suggesting people don’t need to put in effort to become a chess master or a sport winner. Instead, they show that top adult performers tend to be “late risers”. In sports, for example, world-class athletes peak later than national-class athletes. Those who peak early reach a level that is the best for their age but that isn’t as high as what the other group will finally achieve when older. Indeed, given that microgravity and strong energy rays from space might affect the microbial (微生物的) interactions needed for this process, it has always been unclear if fermentation was even possible in space. Now, researchers Maggie Coble from Massachusetts and Josh Evans from Denmark have proved that fermentation is possible by creating miso, a kind of condiment (酱料), in space. They first prepared a ready-to-ferment mixture using cooked soybeans, salt and rice previously fermented. The mixture was separated into three containers and frozen. One remained in Denmark, one went to Massachusetts, and one was sent to Houston for transport to the ISS. All of them fermented for several weeks. When the miso returned to Earth for analysis, researchers identified all the chemicals normally found in this condiment. Taste tests showed that the taste was similar compared to Danish and Massachusetts miso. Even so, it was different enough for the researchers to call it “space miso”. The space miso had a stronger sweet taste than the Earth-made miso, coming from high levels of C₆H₁₀O₂, the same chemical also found in honey and some wines. It also had stronger cheese-like taste, probably resulting from higher concentrations of an acid, a type of chemical. Why these chemicals appeared in greater amounts remains unconfirmed, but microgravity is the likely cause. Under normal condition on Earth, a small amount of gas produced by microbes during fermentation simply rise upwards to the surface. Not so in space. In microgravity, the gas travel in all directions, probably affecting microbial growth by changing how important gases like oxygen spread around.
