Turning soil (翻土), pulling grass, and picking cabbages sound like hard work for middle and high school students. And at first it is, says Abby Jaramillo, who with another teacher set up Urban Sprouts, a school garden program in four poor schools. The program wants to help students improve science skills, care more about the environment and develop healthy eating habits.
Jaramillo’s students live in neighborhoods where fresh food and green space are hard to find. There are lots of fast-food restaurants nearby. “Students always come to school with many snacks and soft drinks,” she says: “They come to us thinking vegetables are awful, dirty soil is awful and insects are awful.” Some students are scared of insects and hate dirty soil at first, but most want to try something new.
Urban Sprouts’ classes, in two middle schools and two high schools, include colorful activities like testing soil, studying plants, and working in the garden. Several times a year, students cook the vegetables they grow, and sometimes they also make salads for their schools.
It turns out that students eat more vegetables after taking the classes. “Some students say they talk with their parents at home, and their families start to eat healthily as well,” Jaramillo says.
She adds that the program also brings many other good changes. Some students get so interested in gardening that they take seeds home to start their own vegetable gardens. Also, garden work can make some special students who have problems controlling their feelings calm down. “They work outdoors,” she says, “and they feel successful.”

Imagine a piece of ice at-4℃. You raise the temperature to-3℃, then-2℃, yet nothing changes. Even at-1℃, it is still ice. All your efforts seem useless. Only at 0℃ does it finally begin to melt (融化). So where does the heat go before melting begins? Those early efforts aren’t wasted — they are building up. This time of unseen progress is called the Plateau of Latent Potential (潜力高原期), a time when your hard work stays as stored energy, waiting to reach a certain point. We can see this everywhere. Think about how bamboo grows. It spends its first five years building large root (根) systems under the ground, and shoots 90 feet into the air in just six weeks.
In our minds, we often expect fast progress, but real growth often appears later than we expect. When our hopes don’t match the real results, we may feel disappointed and doubt ourselves. Many of us give up just before our breakthrough (突破). However, once we pass the key point, we can get a breakthrough, and big changes may come almost overnight.
To reach that moment, you need more than just effort. You also need to change your way of thinking. Trust the process, focus on your daily plans and celebrate small wins.
