Freezers are essential technology, as they keep many different kinds of foods and medicines fresh. But they worsen climate change. Boris Rubinsky, a biomedical engineer at the University of California, came up with the idea for isochoric freezing (定容冷冻) while working on ways to preserve human organs. If the food industry worldwide were to switch over to this method, as Rubinsky’s team found, the drop in emissions per year would be the same as taking about one million gas-powered cars off the road.
To use isochoric freezing, you fill a special canister (金属罐) with water first, float food inside, near the top. Then you seal it up and place the whole thing in a regular freezer. The water begins freezing from the bottom and expands. This increases the pressure inside the canister. Eventually, the high pressure makes it impossible for ice to keep forming. The food at the top remains floating in water at “close to freezing temperatures, but without any ice in the food”, explains Bilbao-Sainz, a food scientist at the US Department of Agriculture’s Agricultural Research Service in Northern California.
Why does this save electricity? The food never freezes solid, so it takes much less energy to get the canister cold enough. A typical food freezer runs at-20 degrees Celsius, but to use isochoric freezing with solid foods such as tomatoes or blueberries, your freezer needs to be at-5 degrees Celsius or higher.
To use the new technique, the food industry wouldn’t have to change out their current freezers, just set them to run warmer. Bilbao-Sainz and her team are working on ways to produce and sell canisters of different sizes.
If all that weren’t exciting enough, this new method also usually results in fresher, tastier foods. Regular freezing forms ice that damages many foods. If you put a tomato into a regular freezer, for example, it will go bad when you thaw (解冻) it. In an isochoric freezer, though, “tomatoes got really, really good results,” says Bilbao-Sainz. “They taste fresh.”

For much of the year, the main attraction of Zhuji, a city in Zhejiang province, is its status as the birthplace of Xi Shi, a woman of great classical beauty who lived 2,500 years ago. But since 2023 tens of thousands have been to Zhuji around the new year for the Xi Shi Music Festival. More than 133,000 visitors stayed overnight during this year’s event, a 29% increase over the one in 2025.
China is enjoying a concert boom. Last year the box-office intake from performances totalled 62 billion yuan, up from 20 billion in 2019, according to figures from the China Association of Performing Arts. Not only are there more offerings, but better ones, too. On a concert of Mayday, a rock band from Taiwan, band members popped up as giant avatars on a huge 3D screen. They also wowed the crowd on a bus, on which a stage was set up, as it circled its way around the Bird’s Nest stadium in Beijing.
What is striking is that almost everywhere else consumers have been unwilling to spend since the pandemic (流行病), yet concerts have roared back to life in China. Visitors lift the economies of the spots they go to as they splash out (挥霍) on food and accommodation. Some places have started introducing policies to attract artists to perform. The Performing Arts Association suggests that one yuan spent on concert tickets can bring nearly seven yuan of additional spending.
Some fans are particularly hardcore. Last year Ms Wang, a 35-year-old, followed Mayday to different cities to watch their shows, together with her husband, spending 20,000 yuan on tickets and the same again on flights and hotels. Going to shows is one of the things that she looks forward to most. She also recalls sobbing uncontrollably during her first Mayday concert after the pandemic.
Chinese commentary has come to call this kind of spending “emotional consumption”: paying for experiences to comfort the soul, rather than collecting material possessions. This kind of spending is rising in spite of, or perhaps even because of, a discouraging economic situation. Some may regard the trend as a one-time thing; if it gets young people to consume, though, you might just rock and roll with it.
