A Judge’s Perspective
My advice to entrants is to think outside the box regarding the theme — reject the most obvious ideas! Really let yourself go in thinking of different approaches to the subject. I see each entry envelope as a natural integration of three parts: solid lettering; creative design or illustration; and stamps relating to the theme.

500ml chicken soup

200g sugar snap peas
100g asparagus tips
100g natural yoghurt

Method
• Season the skinless chicken.
• Heat moderate olive oil in a pan, fry the chicken until brown on both sides and then set aside on a separate plate.
• Now add the onion, garlic, celery to the pan and stir-fry for a few minutes until soft.
• Return the chicken to the pan, add the chicken soup and cook gently for around 20 minutes, until the chicken is done.
• Then add the peas, sugar snaps and asparagus. Cook for 5 minutes until the vegetables are just tender. Stir in the yogurt.
• Just before serving, add the lemon juice, mint, and basil. Adding the lemon too early may discolour the vegetables.

Method
• Season the skinless chicken.
