In southwest Spain, black Iberian pigs look for food under centuries-old oak trees, a process key for the unique taste of the Jamon Iberico, a special cured ham (腌制火腿) made from these pigs. However, according to National Geographic, more heat waves and a five-year drought have reduced the number of the trees’ acorns (橡子) as well as the grass around them. Without these natural food sources, the pigs require extra feed, which changes the ham’s unique taste.
Drought also affects the taste of fruits. Watermelons, for example, show significant flavor changes during drought conditions. According to researchers at the Agrifood Research and Technology Center of Aragon in Spain, compounds (化合物) such as sugars build up during drought, changing the taste of food, either for better or for worse.
Beyond drought, rising temperatures and sea levels also influence food flavors. Warm days and cool nights help fruits develop the best flavor by increasing their sugar content and acidity (酸度). Some cats would refuse to take their medicine, or become upset after having their legs injured but not our Xena. She seemed to be a model patient. A couple of months later, David and I went on a holiday. To be safe we left Xena at the animal hospital’s “Cat Hotel”. After she came home from the “hotel”, her fur and weight grew back, and she became a healthy, happy cat again.

At the age of 60 Chen Lie suffered a stroke(中风). As part of her recovery, she had to relearn how to do everything with her left hand, resulting in much annoyance. One day, for the first time in her life, she picked up one of her grandchild’s paintbrushes and just started putting color on the paper.
Happiness dawned on Chen as she suddenly could paint lovely natural scenery. “I had nothing else to do, so I just picked up the paintbrush and had a try,” Chen said.
After her stroke, Chen completed in-patient therapy(治疗)in Texas. Then she moved to New York to enroll in an experimental robotic-assisted therapy program. With the robotic arm, she could complete more tasks that were impossible before. “Every time I recovered something, I would tell the good news to the program members,” Chen said. “They thought it was a wonder that I could do something like painting.”
Chen has completed about 500 paintings to date. During the month of May, which is National Stroke Awareness Month, she was painting one every day and posting a picture of it on her Facebook page, Stroke of Hope, to help raise awareness.
“I often read about how to paint,” said Chen. “I’ve gained a lot of knowledge, so besides the hand painting, the brain keeps thinking. That’s good for stroke patients to keep the brain working.” Chen’s daughter Liana said, “It’s nice to see Mom doing something she loves.”

Climate change leads to rising temperatures, increased sea levels, and drought (干旱). However, its effects don’t end there — it can also change the taste of food.
In southwest Spain, black Iberian pigs look for food under centuries-old oak trees, a process key for the unique taste of the Jamon Iberico, a special cured ham (腌制火腿) made from these pigs. However, according to National Geographic, more heat waves and a five-year drought have reduced the number of the trees’ acorns (橡子) as well as the grass around them. Without these natural food sources, the pigs require extra feed, which changes the ham’s unique taste.
Drought also affects the taste of fruits. Watermelons, for example, show significant flavor changes during drought conditions. According to researchers at the Agrifood Research and Technology Center of Aragon in Spain, compounds (化合物) such as sugars build up during drought, changing the taste of food, either for better or for worse.
Beyond drought, rising temperatures and sea levels also influence food flavors. Warm days and cool nights help fruits develop the best flavor by increasing their sugar content and acidity (酸度). However, global warming is changing this. For example, Japanese apples are becoming less acidic, softer, and drier because they bloom early and grow in higher temperatures. Oysters, which do best in a mix of salt and freshwater, are losing their unique taste because rising sea levels are making their environment too salty.
While the food we eat is affected by climate change, our food choices also impact the climate. Meat and milk products, especially from cows, contribute significantly to greenhouse gas emissions. Raising animals for food makes up about 14.5 percent of the world’s total greenhouse gas emissions, similar to the emissions from all vehicles combined. Producing animal protein (蛋白质) uses more land, energy and water than plant protein.
While this seems like a bad cycle, it can be broken. For example, The Good Food Institute, a US-based think tank, believes people will choose alternative proteins if they are as tasty and affordable as meat. Meanwhile, more farmers are practicing “greener” farming, and when people buy local, in-season produce, the impact on the environment is reduced.

In February 2023, our beautiful cat, Xena, suddenly lost the use of her back legs. My husband David and I were shocked and had our hearts in our mouths. We immediately took her straight to the hospital.
Doctors said Xena was badly ill and that she might walk again after surgery (外科手术). Days after surgery, she got some feelings in her back legs again. Later, we took her home, with medicine and instructions for her care. No one could say if Xena would actually get full use of her back legs again. It was largely up to her own efforts and determination. We booked her hydrotherapy (水疗法). Most cats would panic if they were put in the water, but our little cat surprised everyone. She never panicked and she tried to put up with neck-deep water.
Over the next few weeks, she continued with her hydrotherapy. Soon, she could manage the few steps out into our garden, though she still needed some help to walk properly. Her determination was so impressive. Despite probably being in pain, she really wanted to walk again, play, and do all the things that cats can do.
Some cats would refuse to take their medicine, or become upset after having their legs injured but not our Xena. She seemed to be a model patient. A couple of months later, David and I went on a holiday. To be safe we left Xena at the animal hospital’s “Cat Hotel”. After she came home from the “hotel”, her fur and weight grew back, and she became a healthy, happy cat again.
We had thought she might be damaged forever by all that had happened to her. But this courageous, little cat simply brushed it all off its life and got on with living. She met a big challenge. And in the end, she got the better of it. We should learn from our Xena.
