Get an A+ in Food Safety This School Year
As the school year begins, one often overlooked item deserves a spot on every checklist: food safety! Here are some guidelines to keep food safe when packing your lunches.
Clean — Recently, the U.S. Department of Agriculture (USDA) has conducted an observational study on food preparation, which showed that only 44% of the participants attempted to wash their hands before meal preparation, a failing grade no matter how you look at it. Even fewer participants (3%) washed their hands properly by rubbing hands for at least 20 seconds. To get an A, wet hands, apply soap, rub for at least 20 seconds, rinse, and dry with a clean towel before, during, and after preparing food, and before eating.
Separate — Avoid spreading germs when preparing foods. Use one cutting board for raw meats and another for vegetables, fruits, and ready-to-eat foods. When packing, keep foods that spoil easily, such as prepared meats, in a special lunchbox with a cold source, like a frozen gel pack. Do not reuse packaging such as resealable plastic bags, as they can spread bacteria.
Chill — You’ll pass the final “food safety exam” by never leaving food out of refrigeration for over two hours. Leaving food out too long at room temperature can cause bacteria to grow to dangerous levels that can cause illness. Bacteria grow most rapidly in the range of temperatures between 4℃ and 60℃, doubling in number in as little as 20 minutes. This range of temperatures is often called the “Danger Zone”.
Caution — Never taste food to determine its safety. When in doubt, throw it out. While you may have substitute teachers, there is never a substitute for food safety.

On a recent weekday, I sent an Instagram message to a friend of mine, an art adviser named Stephen Truax, to chat about an exhibition. Instead of messaging me back in the app, he texted me to say that he’d blocked Instagram on his smartphone during daytime working hours.

On a recent weekday, I sent an Instagram message to a friend of mine, an art adviser named Stephen Truax, to chat about an exhibition. Instead of messaging me back in the app, he texted me to say that he’d blocked Instagram on his smartphone during daytime working hours.
Impressed, I asked him how he was accomplishing such an achievement. Truax said he was using Opal, an app that makes your smartphone more like a so-called dumbphone (功能机). He said that several of his friends swore by the app, and so he had begun using it, too. I took this word of mouth as evidence that it might actually work. I downloaded it without any particular optimism, considering my phone addiction an incurable case.
Opal provides something like gentle parenting for your smartphone habits: you set up a daily schedule of which apps to block, and then the app guides you into sticking with it. As the app suggested, I set up a “Work Time” block from 9 A.M. to 5 P.M. and selected every social app I ever use. At the scheduled time, those apps go gray on my home screen and remain that way all day.
Every time I’m frustrated that I can’t look at Instagram on my phone, I just think, surely I, a human adult, can wait a few more hours to see my friends’ dog photos — 5 P.M. isn’t that far away. Crucially, Opal also allows users to suspend the block for short periods of time without feeling like failures; when the scheduled break time elapses, the blockage automatically continues.
I find comfort in the fact that my mind feels clearer after a full workday without scrolling social media, and an added bonus is that once the block ends I can go through all the good posts that I missed. As Truax told me, “The flood of content that happens after dinner is wild.” The addiction is not cured, perhaps, but at least it’s finally managed.

A new study has revealed the vast majority of Australians worry about what might happen to the Great Barrier Reef, the country’s largest natural wonder. Environmental groups warn authorities that bold action is needed now to secure its future.
The report, commissioned by the Great Barrier Reef Foundation (GBRF), shows that the Reef is still one of the world’s most valuable ecosystems, but its survival cannot be guaranteed without major investment and strong climate action. The Reef brings about 9 billion Australian dollars to the economy each year and supports around 77,000 jobs. Economists estimate that, with urgent climate efforts, it could bring another 124 billion dollars in benefits over the next 50 years. But without action, experts warn, it may not survive at all.

From an airplane, cars moving slowly down the highway look like ants. But unlike cars, ants manage to avoid the problem of stop-and-go traffic. Researchers are now studying these insects’ helpful ways to learn how to further program self-driving cars that run more efficiently and don't get stuck in traffic.
The free flow of traffic becomes not stable as the number of cars increases on a highway. At 15 vehicles per mile per lane (车道), one driver hitting their brakes can start a long-lasting wave of traffic jams.
The previous research of Nishinari, a mathematical physicist at the University of Tokyo, had shown that ants looking for food can keep their flow even at high densities (密度). In a recent study, researchers recorded ants on their way to find food and used traffic-engineering models to analyze their movement. They found that the ants don't get stuck because they travel in groups of 3 to 20 that move at almost the same speed while keeping good distances between one another, and they don't speed up to go past others.
Human drivers during the rush hour are hardly likely to follow such rules. “We’re trying to get the most benefits for ourselves, which is why, at a certain point, we start to have a traffic jam,” says study co-author Nicola Pugno. But self-driving cars, if they one day become very common, could have more cooperative programming.
This vehicle network would be like ants on a trail, which use smell to work together in their behaviors. In both ant and vehicle traffic, this type of system can be very strong and able to recover quickly, according to Nishinari.
Still, ants can do things that cars-even self-driving ones-can’t. Plus, unlike cars, ants don't crash; they can actually walk over one another. Today's drivers can learn from ants to avoid causing a traffic jam: Keep a safe distance from the car in front. By doing this, drivers can deal with braking in heavy traffic conditions that would otherwise become a big traffic jam.
