Besides enjoying beautiful lanterns, another important part of the Lantern Festival is eating dumpling balls made of glutinous rice flour (糯米粉). These balls are known as yuanxiao. Clearly, they got the names from the festival. It’s said that the custom (习俗) of eating yuanxiao started in the Eastern Jin Dynasty in the 4th century, and then become popular during the Tang and Song periods.
The fillings (馅) inside the dumplings are either sweet or salty. Sweet fillings are made of sugar, sesame, flowers and so on. One ingredient (原料) or any mixture can be used for the filling. The salty kind is filled with meat, vegetables or a mixture.
There are different ways to make yuanxiao. People in southern provinces have a usual way to make yuanxiao. They form the rice flour into balls, make a hole, add the filling, and then close the hole and smooth out the dumpling by rolling (翻滚) it between hands.
In North China, sweet or non-meat fillings are the usual ingredients. The fillings are pressed into (压成) hardened cores (核), dropped lightly in water and rolled in a flat basket with dry glutinous rice flour. The flour sticks to the fillings. Then the fillings are again dropped in water and rolled a second time in the rice flour. And so it goes, like rolling a snowball, until the dumpling is the wanted size.

Besides enjoying beautiful lanterns, another important part of the Lantern Festival is eating dumpling balls made of glutinous rice flour (糯米粉). These balls are known as yuanxiao. Clearly, they got the names from the festival. It’s said that the custom (习俗) of eating yuanxiao started in the Eastern Jin Dynasty in the 4th century, and then become popular during the Tang and Song periods.
The fillings (馅) inside the dumplings are either sweet or salty. Sweet fillings are made of sugar, sesame, flowers and so on. One ingredient (原料) or any mixture can be used for the filling. The salty kind is filled with meat, vegetables or a mixture.
There are different ways to make yuanxiao. People in southern provinces have a usual way to make yuanxiao. They form the rice flour into balls, make a hole, add the filling, and then close the hole and smooth out the dumpling by rolling (翻滚) it between hands.
In North China, sweet or non-meat fillings are the usual ingredients. The fillings are pressed into (压成) hardened cores (核), dropped lightly in water and rolled in a flat basket with dry glutinous rice flour. The flour sticks to the fillings. Then the fillings are again dropped in water and rolled a second time in the rice flour. And so it goes, like rolling a snowball, until the dumpling is the wanted size.
