Mulberry Street was a quiet and peaceful place. Every Monday was a special day there because it was recycling day. Cutting Sugarcane
When was the last time you ate candy? What did you eat? Was it hard or soft? The chances are it was made with sugar. But how was it made?
Farmers cut sugarcane with large knives. Then they pick the stalks to get the juice out. Farmers crush the plants to get the juice within twenty-four hours. If they don’t get the juice by then, the sugar will not be good.
Sugarcane makes seeds, but most farmers do not plant them. They cut sugarcane stalks, and then they plant them again. Sugarcane can be picked by hand and by machine. In some countries, people pick sugarcane by hand. This takes a long time.

Farmers pour the juice through a cloth to get the dirt out of it. Then they put it in water and cook it. After they got the juice, they dry it, and only sugar is left. Raw sugar (原糖) is the first thing that is made. Many people like raw sugar in their drinks or food.
There’s one more step in the process (过程) of making white sugar. The raw sugar is washed and put into a mixture to make it white. Then it is boiled one more time. This is how white sugar is made.
People can make sugar into different kinds of candy. Candy had very few flavors many years ago. People made the flavors from different kinds of fruit. Some are sweet. Some are sour (酸的). They took all of the juice out of the fruit. After that, they mixed the juice together with water. Candy has more flavors now.
Different Kinds of Candy
In the 1700s, people began putting hard candy on sticks. Then they wrapped paper around it. Do you know what they called this? This was the first lollipop.
There are also many other different kinds of candy. Soft candy, such as jelly beans and caramels, is popular. Soft candy has less sugar in it than hard candy.
Another type of candy is chocolate. A long time ago, it was only a drink. But this drink wasn’t sweet like chocolate is today. People in Europe put sugar in the drink to make it sweet.

Cutting Sugarcane
When was the last time you ate candy? What did you eat? Was it hard or soft? The chances are it was made with sugar. But how was it made?
Farmers cut sugarcane with large knives. Then they pick the stalks to get the juice out. Farmers crush the plants to get the juice within twenty-four hours. If they don’t get the juice by then, the sugar will not be good.
