Then the judges announced that the dish we had to make was meatloaf. I couldn’t believe my ears. Meatloaf? The dish I had seen my mom make countless times? Memories of my mom preparing meatloaf came flooding back. I began combining the beef with the onions. As I stirred them, I could almost hear Mom’s voice instructing me. To add a personal touch, I even used tomato sauce. As I baked the meatloaf, the familiar smell floated up, reminding me of Meatloaf Mondays at home. With the timer finally going off, I pulled my meatloaf out.
I looked at my creation proudly, waiting for the judges to taste it. When they reached me, I held my breath. They took a bite, nodded, and moved on. After all the dishes were tasted, the judges announced the winner. To my astonishment, it was me! Winning the book was amazing, but what mattered more was the newfound appreciation I had for my mom. From that day on, Meatloaf Monday became a family favorite, not because of the dish itself, but because of what it represented: love, effort, and the ability to make the best out of any situation.

I recently went on my first overseas vacation to Greece. I was with my in-laws and my wife, and naturally, we went to restaurants whenever we were hungry. Having lived in North America for my entire life, I had certain expectations of restaurants: You go in, peruse the menu, place your order, get your food, eat it, pay, tip, and go on your way. I knew that European countries did not generally participate in tipping culture, but I didn’t understand how that fundamentally altered the entire business interaction.
Whenever we finished eating, we would relax with the dishes that we were very obviously done with, chat for a bit, and wait for the bill. Wait, wait, and wait!
This happened at every restaurant we went to: After we were done and ready to pay and leave, we would end up waiting twenty or thirty minutes to actually get the bill and pay. We absolutely could not figure it out! The servers seemed to be so attentive to everyone else in the restaurants, the locals, but for the obvious group of tourists, we were just left to wait, wait, and wait! It was actually getting frustrating!
I finally figured it out on the last day of our trip, watching the locals. When the locals finished their meals, they would not pay immediately, Instead, they would sit and chat, and just sort of… hang out. They would pay when they were ready to leave, and no one would hustle(催促) them out of there. Because the servers weren’t working for pennies and dependent on tips, they had no reason to move people along. Everyone was allowed to move at their own pace, pay when they were ready to pay, and leave when they were ready to leave. The servers would expect the customers to approach or signal them that they were done, rather than checking every few minutes to get things moving. What a novel experience! I wish we had figured it out sooner.

I grew up in Beirut, Lebanon, where an amazingly rich cooking tradition that has been perfected for thousands of years taught me the love of good food. Yet, these were times when globalization had not reached the kitchen table, and I had limited exposure to the various cuisines we take for granted here in Vancouver. I had never had guacamole until I moved to North America!
I have Armenian heritage, which means that I have recipes passed down to me from my mother. I got my love of cooking from her. My two children have had the chance to enjoy food from everywhere in the world. They don’t find it remarkable at all that in the same week, they could go on a worldwide cuisine journey that could include sushi, samosas, tamales, and tabboulch. Through food, they have come to learn about and celebrate the rich cultural traditions and identities that make Vancouver a wonderful diverse city.

A typical Italian child can name twenty-two different kinds of pasta, whereas a child in Canada might know three to four different kinds. Different dietary habits and food consumption have their own geographical(地理的) distribution, especially in China. The Chinese people have developed many traditional foods through their long history and also led to a rich and diverse food culture. I recently went on my first overseas vacation to Greece. I was with my in-laws and my wife, and naturally, we went to restaurants whenever we were hungry. Having lived in North America for my entire life, I had certain expectations of restaurants: You go in, peruse the menu, place your order, get your food, eat it, pay, tip, and go on your way. I knew that European countries did not generally participate in tipping culture, but I didn’t understand how that fundamentally altered the entire business interaction.
Whenever we finished eating, we would relax with the dishes that we were very obviously done with, chat for a bit, and wait for the bill. Wait, wait, and wait!
This happened at every restaurant we went to: After we were done and ready to pay and leave, we would end up waiting twenty or thirty minutes to actually get the bill and pay. We absolutely could not figure it out! The servers seemed to be so attentive to everyone else in the restaurants, the locals, but for the obvious group of tourists, we were just left to wait, wait, and wait! It was actually getting frustrating!
I finally figured it out on the last day of our trip, watching the locals. When the locals finished their meals, they would not pay immediately, Instead, they would sit and chat, and just sort of… hang out. They would pay when they were ready to leave, and no one would hustle(催促) them out of there. Because the servers weren’t working for pennies and dependent on tips, they had no reason to move people along. I recently went on my first overseas vacation to Greece. I was with my in-laws and my wife, and naturally, we went to restaurants whenever we were hungry. Having lived in North America for my entire life, I had certain expectations of restaurants: You go in, peruse the menu, place your order, get your food, eat it, pay, tip, and go on your way. I knew that European countries did not generally participate in tipping culture, but I didn’t understand how that fundamentally altered the entire business interaction.
Whenever we finished eating, we would relax with the dishes that we were very obviously done with, chat for a bit, and wait for the bill. Wait, wait, and wait!
This happened at every restaurant we went to: After we were done and ready to pay and leave, we would end up waiting twenty or thirty minutes to actually get the bill and pay. We absolutely could not figure it out! The servers seemed to be so attentive to everyone else in the restaurants, the locals, but for the obvious group of tourists, we were just left to wait, wait, and wait! It was actually getting frustrating!
I finally figured it out on the last day of our trip, watching the locals. When the locals finished their meals, they would not pay immediately, Instead, they would sit and chat, and just sort of… hang out. They would pay when they were ready to leave, and no one would hustle(催促) them out of there. Because the servers weren’t working for pennies and dependent on tips, they had no reason to move people along. Everyone was allowed to move at their own pace, pay when they were ready to pay, and leave when they were ready to leave. I grew up in Beirut, Lebanon, where an amazingly rich cooking tradition that has been perfected for thousands of years taught me the love of good food. Different dietary habits and food consumption have their own geographical(地理的) distribution, especially in China. The Chinese people have developed many traditional foods through their long history and also led to a rich and diverse food culture. Due to the geographical environment, there are some dietary and cultural differences between Northern and Southern China.
