Judy knew now what she would do to cheer her grandmother up. She searched through the box of cards until she found her grandmother’s recipe for pancakes — everyone’s favorite. Then, moving quietly so that she wouldn’t disturb her grandmother in the next room, she began to gather the ingredients and cook her first pancake. As the wonderful smell of fresh pancakes began to fill the kitchen, Judy smiled. She couldn’t cook any of the more complicated dishes, but pancakes were always a wonderful treat. The French author Jean Anthelme Brillat-Savarin once wrote, “Tell me what you eat, and I will tell you what you are.” Put more simply, this means “You are what you eat.” Most people today relate this saying to healthy eating. However, Brillat-savarin was actually referring to our personality, character, and culture.
Certainly, in many ways this seems to be true. America’s most popular Chinese dish is General Tso’s chicken, which consists of fried chicken covered in a sweet sauce, favoured with hot red peppers. A Sichuan restaurant had been recommended to us by a friend, we had no idea how to order, so the chef just began filling our table with the best food we had ever eaten. With this, we had the pleasure of experiencing an entirely new taste: Sichuan peppercorns. The food was wonderful and different, but what was even more important was the friendship offered us.
We soon moved to Shandong Province in the eastern part of North China. My favourite dish there was boiled dumplings served with vinegar. I observed that family is important to the people there. It has become a favourite traditional dish of the people in North China, where making dumplings has always been a family affair with everyone — from the youngest to the oldest — joining in to help. Later, I learned that the most famous food in Shandong is pancake rolls stuffed with sliced Chinese green onions.
Then we moved to northern Xinjiang. Some of our friends were Kazak and Inner Mongolian. Our travels then took us to South China, and then on to central China. Everywhere, the food was as varied as the people. However, one thing is always true: Through food, Chinese people everywhere show friendship and kindness.

Your favourite foods might not taste the same in the future, and the climate crisis is behind it.
In Spain, the black Iberian pigs, which are very important for making special ham, usually eat acorns(橡子) and surrounding grass under oak trees. However, because of heatwaves and a five-year drought, these natural foods are becoming less. So, the pigs are now fed olives(橄榄), thereby changing the unique flavour of the ham.

Beyond drought, rising temperatures and sea levels also influence food flavours. For example, Japanese apples are becoming less acidic, softer, and drier due to early blooming and high temperatures during growth.
While the food we eat is deeply influenced by the climate crisis, our food choices also cause it. Eating meat and dairy from cows has a big impact on the climate. Raising livestock(牲畜) produces a lot of greenhouse gases. Making animal protein also needs more land, energy and water than making plant-based protein.
This may seem like a problem that can’t be solved, but we can break this cycle. The Good Food Institute, a US group, believes people will choose alternative protein if they are as tasty and affordable as meat.
Meanwhile, more people have started to take action. According to The New York Times, Will Hlamris, a US farmer, practises regenerative farming, allowing cows to move around freely, using less chemical use and disturbing the soil less, which is more environmentally friendly.

Billionaire Carl Icahn has stepped up his fight with McDonald’s over the welfare of pigs used in its food chain. He said McDonald’s had not lived up to a promise to stop the pork from pigs housed in crates for the pregnant, a practice targeted by animal lovers. Activist investors such as Mr Icahn-one of a handful of feared investors said to have been the model for Gordon Gekko in the 1987 movie Wall Street-normally focus on companies they believe need restructuring.
McDonald’s promised to stop ordering pork from suppliers putting pregnant pigs in crates back in 2012. The firm said it had “led the industry” since then and about a third of US pork suppliers have moved to group housing systems. It said it expected to source 85% to 90% of its pork from these suppliers by the year’s end. All of the pork it buys will come from these suppliers by 2024.
McDonald’s said in a statement that it would continue to work with the industry to improve standards, but that some of Mr Icahn’s demands were unreasonable. It also noted that Mr Icahn was the majority owner of Viskase, which makes and supplies packaging for the pork and poultry industry. It added that he had “not publicly called” on Viskase to make similar commitments.

The French author Jean Anthelme Brillat-Savarin once wrote, “Tell me what you eat, and I will tell you what you are.” Put more simply, this means “You are what you eat.” Most people today relate this saying to healthy eating. Later, I had a chance to experience authentic Chinese food by coming to China. A Sichuan restaurant had been recommended to us by a friend, we had no idea how to order, so the chef just began filling our table with the best food we had ever eaten. With this, we had the pleasure of experiencing an entirely new taste: Sichuan peppercorns. The food was wonderful and different, but what was even more important was the friendship offered us.
We soon moved to Shandong Province in the eastern part of North China. My favourite dish there was boiled dumplings served with vinegar. I observed that family is important to the people there. It has become a favourite traditional dish of the people in North China, where making dumplings has always been a family affair with everyone — from the youngest to the oldest — joining in to help. Later, I learned that the most famous food in Shandong is pancake rolls stuffed with sliced Chinese green onions.
Then we moved to northern Xinjiang. Some of our friends were Kazak and Inner Mongolian. Our travels then took us to South China, and then on to central China. Your favourite foods might not taste the same in the future, and the climate crisis is behind it.
In Spain, the black Iberian pigs, which are very important for making special ham, usually eat acorns(橡子) and surrounding grass under oak trees. However, because of heatwaves and a five-year drought, these natural foods are becoming less. So, the pigs are now fed olives(橄榄), thereby changing the unique flavour of the ham.
Drought also affects how fruits taste. For example, watermelons and cantaloupes(香瓜) taste different when there’s a drought. Researchers from a Spanish tech centre told a Spanish newspaper that sugars and other compounds build up during droughts, changing the taste of food, sometimes for better, sometimes for worse.
Beyond drought, rising temperatures and sea levels also influence food flavours. Typically, warm days and cool nights improve the sugar and acid content in fruits, which are essential for the optimal flavour. However, global warming makes this hard to achieve. For example, Japanese apples are becoming less acidic, softer, and drier due to early blooming and high temperatures during growth.
While the food we eat is deeply influenced by the climate crisis, our food choices also cause it. Eating meat and dairy from cows has a big impact on the climate. Raising livestock(牲畜) produces a lot of greenhouse gases. Making animal protein also needs more land, energy and water than making plant-based protein.

Billionaire Carl Icahn has stepped up his fight with McDonald’s over the welfare of pigs used in its food chain. The French author Jean Anthelme Brillat-Savarin once wrote, “Tell me what you eat, and I will tell you what you are.” Put more simply, this means “You are what you eat.” Most people today relate this saying to healthy eating. However, Brillat-savarin was actually referring to our personality, character, and culture.
Certainly, in many ways this seems to be true. America’s most popular Chinese dish is General Tso’s chicken, which consists of fried chicken covered in a sweet sauce, favoured with hot red peppers. This is probably not an authentic Chinese recipe, however, so it cannot tell us much about the Chinese. On the other hand, it does tell us a lot about Americans. It tells us, for example, that Americans love bold, simple flavour. And since the dish was also invented recently, it tells us that Americans are not afraid to try new foods.
Later, I had a chance to experience authentic Chinese food by coming to China. A Sichuan restaurant had been recommended to us by a friend, we had no idea how to order, so the chef just began filling our table with the best food we had ever eaten. With this, we had the pleasure of experiencing an entirely new taste: Sichuan peppercorns. The food was wonderful and different, but what was even more important was the friendship offered us.
We soon moved to Shandong Province in the eastern part of North China. My favourite dish there was boiled dumplings served with vinegar. I observed that family is important to the people there. It has become a favourite traditional dish of the people in North China, where making dumplings has always been a family affair with everyone — from the youngest to the oldest — joining in to help. Later, I learned that the most famous food in Shandong is pancake rolls stuffed with sliced Chinese green onions.
Then we moved to northern Xinjiang. Some of our friends were Kazak and Inner Mongolian. Our travels then took us to South China, and then on to central China. Everywhere, the food was as varied as the people. However, one thing is always true: Through food, Chinese people everywhere show friendship and kindness.

Your favourite foods might not taste the same in the future, and the climate crisis is behind it.
In Spain, the black Iberian pigs, which are very important for making special ham, usually eat acorns(橡子) and surrounding grass under oak trees. However, because of heatwaves and a five-year drought, these natural foods are becoming less. So, the pigs are now fed olives(橄榄), thereby changing the unique flavour of the ham.
Drought also affects how fruits taste. For example, watermelons and cantaloupes(香瓜) taste different when there’s a drought. Researchers from a Spanish tech centre told a Spanish newspaper that sugars and other compounds build up during droughts, changing the taste of food, sometimes for better, sometimes for worse.
Beyond drought, rising temperatures and sea levels also influence food flavours. Typically, warm days and cool nights improve the sugar and acid content in fruits, which are essential for the optimal flavour. However, global warming makes this hard to achieve. For example, Japanese apples are becoming less acidic, softer, and drier due to early blooming and high temperatures during growth.
While the food we eat is deeply influenced by the climate crisis, our food choices also cause it. Eating meat and dairy from cows has a big impact on the climate. Raising livestock(牲畜) produces a lot of greenhouse gases. Making animal protein also needs more land, energy and water than making plant-based protein.
This may seem like a problem that can’t be solved, but we can break this cycle. The Good Food Institute, a US group, believes people will choose alternative protein if they are as tasty and affordable as meat.

Billionaire Carl Icahn has stepped up his fight with McDonald’s over the welfare of pigs used in its food chain.
