Cathy Brennan calmly paddled her bright yellow kayak (皮艇) down the Potomac River, continuing her voyage, the latest of her solo trips on major waterways. In agricultural, pre-industrial Europe, “you’d want to wake up early, start working with the sunrise, have a break to have the largest meal, and then you’d go back to work,” says Ken Albala, a professor of history at the University of the Pacific. “Later, at 5 or 6, you’d have a smaller supper.”
This comfortable cycle, in which the rhythms of the day helped shape the rhythms of the meals, gave rise to the custom of the large midday meal, eaten with the extended family. “Meals are the foundation of the family,” says Carole Counihan, a professor at Millersville University in Pennsylvania, “so there was a very important interconnection between eating together and strengthening family ties.”
Since industrialization, maintaining such a slow cultural metabolism has been much harder, with the long midday meal shrinking to whatever could be stuffed into a lunch bucket or bought at a food stand. Certainly, there were benefits. Modern techniques for producing and shipping food led to greater variety and quantity, including a dramatic increase in the amount of animal protein and dairy products available, making us stronger than our ancestors.
Yet plenty has been lost too, even in cultures that still live to eat. Take Italy for example. It’s no secret that the Mediterranean diet is healthy, but it was also a joy to prepare and eat. Italians, says Counihan, traditionally began the day with a small meal. The big meal came at around 1 p.m. In between the midday meal and a late, smaller dinner came a small snack. Today, when time zones have less and less meaning, there is little tolerance for offices’ closing for lunch, and worsening traffic in cities means workers can’t make it home and back fast enough anyway. So the formerly small supper after sundown becomes the big meal of the day, the only one at which the family has a chance to get together. “The evening meal carries the full burden that used to be spread over two meals,” says Counihan.

Research has found that using wood for construction instead of concrete and steel can reduce emissions. But Tim Searchinger at Princeton University says many of these studies are based on the false foundation that harvesting wood is carbon neutral (碳中和). “Only a small percentage of the wood gets into a timber (木料) product, and a part of that gets into a timber product that can replace concrete and steel in a building,” he says. Efficiencies vary in different countries, but large amounts of a harvested tree are left to be divided into parts, used in short-lived products like paper or burned for energy, all of which generate emissions.
In a report for the World Resources Institute, Searchinger and his colleagues have modelled how using more wood for construction would affect emissions between 2010 and 2050, accounting for the emissions from harvesting the wood. They considered various types of forests and parts of wood going towards construction. They also factored in the emissions savings from replacing concrete and steel.
Under some circumstances, the researchers found significant emissions reductions. But each case required what they considered an unrealistically high portion of the wood going towards construction, as well as rapid growth only seen in warmer places, like Brazil. In general, they found a large increase in global demand for wood would probably lead to rising emissions for decades. Accounting for emissions in this way, the researchers reported in a related paper that increasing forest harvests between 2010 and 2050 would add emissions equal to roughly 10 percent of total annual emissions.
Ali Amiri at Aalto University in Finland says the report’s conclusions about emissions from rising demand are probably correct, but the story is different for wood we already harvest. “Boosting the efficiency of current harvests and using more wood for longer lived purposes than paper would cut emissions,” he says. “We cannot just say we should stop using wood.”

Cathy Brennan calmly paddled her bright yellow kayak (皮艇) down the Potomac River, continuing her voyage, the latest of her solo trips on major waterways. It was tough, but it allowed Brennan to let go of everything else, empty her brain of the everyday chores and focus on the now. “I’m in the moment, looking at the waves.” said Brennan.
The journey is a minimalist style: sleeping bag, small tent, rain jacket, change of clothes, first aid kit, apples and cheese sticks. When she’s thirsty, she scoops water from the rivers and pumps it through a filter. “I always drink the river,” she says. Brennan loves being on the rivers, seeing the bald eagles above, deer on the banks and a fascinating array of bugs and insects that never find their way into homes.
However, every few days Brennan will find a hotel for the night where she can get a shower and eat a cheeseburger. She’ll also check in with her husband John, who has helped her select the river and research the trips at their home. “He’s my virtual Sherpa with benefits,” Brennan says, laughing. She has a phone with her but rarely calls or texts anyone. Her children usually keep track of her via the transponder that sends them her location every 10minutes or so.
Brennan knows that solo kayaking is not for everyone and she’s not reckless. Brennan grew up on a lake and was a strong swimmer and boater from an early age. When going through rough rapids, she watches the weather carefully. She is cautious about where she camps and who is around her. She has packed up her gear and headed back out on the river when she has felt unsafe.
Surely, she is alone on these journeys but she isn’t lonely. She suggested that we all need some disconnection from the wired world to find the wider world around us.

In agricultural, pre-industrial Europe, “you’d want to wake up early, start working with the sunrise, have a break to have the largest meal, and then you’d go back to work,” says Ken Albala, a professor of history at the University of the Pacific. “Later, at 5 or 6, you’d have a smaller supper.”
This comfortable cycle, in which the rhythms of the day helped shape the rhythms of the meals, gave rise to the custom of the large midday meal, eaten with the extended family. “Meals are the foundation of the family,” says Carole Counihan, a professor at Millersville University in Pennsylvania, “so there was a very important interconnection between eating together and strengthening family ties.”
Since industrialization, maintaining such a slow cultural metabolism has been much harder, with the long midday meal shrinking to whatever could be stuffed into a lunch bucket or bought at a food stand. Certainly, there were benefits. Modern techniques for producing and shipping food led to greater variety and quantity, including a dramatic increase in the amount of animal protein and dairy products available, making us stronger than our ancestors.
Yet plenty has been lost too, even in cultures that still live to eat. Take Italy for example. It’s no secret that the Mediterranean diet is healthy, but it was also a joy to prepare and eat. Italians, says Counihan, traditionally began the day with a small meal. The big meal came at around 1 p.m. In between the midday meal and a late, smaller dinner came a small snack. Today, when time zones have less and less meaning, there is little tolerance for offices’ closing for lunch, and worsening traffic in cities means workers can’t make it home and back fast enough anyway. So the formerly small supper after sundown becomes the big meal of the day, the only one at which the family has a chance to get together. “The evening meal carries the full burden that used to be spread over two meals,” says Counihan.

Cathy Brennan calmly paddled her bright yellow kayak (皮艇) down the Potomac River, continuing her voyage, the latest of her solo trips on major waterways. In agricultural, pre-industrial Europe, “you’d want to wake up early, start working with the sunrise, have a break to have the largest meal, and then you’d go back to work,” says Ken Albala, a professor of history at the University of the Pacific. “Later, at 5 or 6, you’d have a smaller supper.”

Linda went for a job interview at a firm that had several start-up businesses under its wing. She applied to be Executive Secretary of the CEO, but her chance of getting the job was slim because she came in late for the interview.
“I’m truly sorry I have come late, sir,” Linda apologized. “But I had an emergency to attend to earlier today and that is why I couldn’t make it on time. I hope you can give me a chance,” she added. “But the job is to be my secretary and being late for your interview is just not good,” George, the CEO, told her. “I’m sorry, but I won’t be able to hire you.” Depressed, Linda left.
When Linda got home, her son Jack found that something seemed to be bothering his mom. Then he asked, “What’s wrong, Mom? How did the job interview go?” “I didn’t get the job, son. I didn’t make it in time for the interview,” she sighed. Jack was almost crying upon hearing this, but Linda tired to comfort him. “It’s all right, son. There are many other jobs I can apply for. It’s no big deal,” she said, hugging him.
The following day, Jack copied the address from his mother’s notebook and came to George’s office without telling his mom. “Hi, sir, I’m Jack. My mom came for an interview yesterday, but you rejected her. Could you please give her a second interview, sir?” he said to the CEO.
“Why should I give her another chance?” George asked. “It was because of my fault that she didn’t make it on time. I accidentally dropped some food juice on my shirt. She had to wash it because it was the only uniform that I could wear in school. It took a while to remove the stain (污渍), so she was late,” Jack said.
“My mom works hard, sir. My parents once ran a cleaning supply and equipment business. Owing to something unexpected, the company was closed down. My parents had to start all over again,” Jack continued.
George listened thoughtfully and began to feel sorry for Linda. He thought the position of Marketing Director would better suit Linda since she had relevant experience. Then he told Jack that he would give his mom a second chance.
