Such mismatch emphasized lower numbers and slightly slowed customers’ decision-making processes, guiding them toward healthier menu options. “Restaurants have an interest in encouraging customers to make healthier choices,” Cai said. “However, simply labeling the food as healthy may not have the intended effect, as people may assume ‘healthy’ food does not taste good.
