Orange chicken, sweet and sour pork, fried rice… Max Burns lists several typical Western-style of Chinese dishes that disappoint him. For a 21-year-old native British young man who spent his first thirteen years in China, those cuisines are far from authentic, but rather a category which is invented to cater to Western preferences.
What also upsets Burns is that the view of Chinese food has been subsequently skewed (扭曲). Quite a few Westerners recognize that particular type of fa re as the whole of Chinese cuisine.
“They almost have no clue about the extent of Chinese cuisine, about how it varies because people forget how big China is. It is a country that has deserts from one side, jungles and sea from the other side. Each area has its unique style of cooking.” he says.
Burns tries to showcase the richness of delicious Chinese dishes by vlogging (拍摄并上传) about making Chinese dishes at home. “Food is probably the most accessible way for everyone to learn an alien culture.” he says.
Sometimes, his British friends would join to help. “And quite often, they were shocked by the diversity of Chinese cuisine. They’ve had a long time to figure out that Chinese food is just a lot more complex.” The food adventure has helped Burns grow into an influencer with more than three million of subscribers worldwide today. “So, I can definitely say that I’ve changed some people’s ideas about Chinese food.”
Interestingly, when Burns first started vlogging in 2016 directly after moving back to Brighton, England from Beijing, copying Chinese food at home was a then “stupid idea”, as he puts it, because he was never super into cooking. At the time, the videos centered more on explaining aspects of Chinese culture, including movies, snacks, restaurants and more.

Imagine a horizontal line. The very left is marked one thousand and the very right is marked one billion. On this line, where would you add a marker to represent one million? If you said somewhere in the middle, you answered the same as the roughly 50 percent of people who have done this exercise in a number line study. But the answer is actually much closer to one thousand since there are one thousand millions in one billion.
This error makes sense because “our human brains are pretty bad at comprehending large numbers,” says Elizabeth Toomarian, an educational neuroscientist at Stanford University. Our brain is built to understand how much of something is in its environment. But comprehending the national debt or imagining the size of our universe? “We certainly can use our brains in that way, but we’re recycling these sorts of evolutionarily (进化地) old brain architectures to do something really new,” she says. In other words, it’s not our fault that we have trouble wrapping our heads around big numbers.
So what can we do about the struggle to understand big numbers? It is suggested to use metaphors, analogies (类比) and visualizations. These techniques bring big numbers down to a more comprehensible scale (比例) and ideally make it relevant to something in our daily lives. For example, it may be difficult for most people to accurately place the extinction of the dinosaurs on a timeline between the Big Bang and humans because the first two both seem to be placed to the distant path. But when conceptualizing (概念化) these events using a “calendar”, it becomes easier. The Big Bang occurred at 12 a.m. on January 1st on the calendar. Dinosaurs were only present for roughly the last week of the year. And humans only emerged in the last eight sends December 31st, at 12:59:52 p.m. It’s clear now that dinosaurs are much closer to humans than the Big Bang on a timeline.
These metaphors and analogies are important if people are to really weigh the costs and benefits of events in their lives. The concept not only applies to long-term decisions, but public policies.

“What do you mean by this phrase? It’s incorrect and adds nothing to the sentence. Omit (省略).” Professor Jones’s critical feedback on my paper hurt me when I first read it. I scanned his comments for a “Good job!” or “I love this idea,” but they were nowhere to be found.
Everyone likes warmth and encouragement, but purely positive affirmations (肯定) don’t communicate what can be improved. Research conducted on Character Lab Research Network finds that direct, useful feedback requiring students to revise their own work is more effective. For Professor Jones, this looked like a note at the end of another paper: “I’m sure things will improve as the term and year wear on.” However, feedback that does the work for a student—correcting a misspelled word, rewriting a sentence—can signal a teacher’s low expectations.
When kids see comments that suggest what needs to be changed, they come to realize they can do things on their own and become more independent learners. As a bonus, this kind of feedback lets students know that their teacher believes in them.
As for me, I was benedictory for Professor Jones’s pointed criticism which let me know that he took me seriously. He was expecting me to do better, and the detailed comments scrawled (潦草地写) on every page gave me the tools to improve. Teachers can add affirmations to their feedback as long as it’s not the only thing they’re doing.
Don’t confuse warmth with promoting a growth mindset. Being nice isn’t the same as showing someone you believe they can improve. So give detailed feedback that sets young people up to take charge of their own learning. For example, instead of rewriting a sentence, say: “This is a run-on sentence. Try reading it out loud and add punctuation in places where you naturally take a breath.” Ask worth-exploring questions that inspire students to think about their approach, then let them revise on their own. When it comes to writing, the easiest path isn’t always the best one.
