The greatest challenge in addressing this issue is time. This makes it extraordinarily difficult to connect today’s environmental exposures with tomorrow’s disease. Ash and sand do not sound like ideal conditions for growing delicious food. Yet in Lanzarote, farmers have developed unique systems to adapt to this environment that is now providing a blueprint for agricultural systems that do well without water.
From 1730 to 1736, more than 30 volcanoes erupted in Lanzarote, burying a quarter of the island under lava (熔岩) and ash, wiping out its most productive farmland. Just a few decades later, drought took hold, a situation that still exists today, with the island receiving rain only about 16 days per year, totalling below 150 millimetres.
People and practices evolved in beautiful and sustainable ways. Through trial and error, they developed a unique agricultural system that continues to feed the island today, largely without irrigation. One of the island’s most distinctive practices is ash-mulch (灰烬覆盖) farming. Farmers cover the soil with a layer of volcanic ash and small stones, which traps drops of water, protects roots and stops the soil drying too fast.
This not only conserves moisture but also adds essential minerals that enrich the soil. Grapes, legumes and sweet potatoes have all been grown in this way. Some farmers also use sand-mulch farming, applying a fine, organic marine sand called jable that is blown onto the island by Atlantic winds. This light sand forms a layer that preserves moisture in the soil below. These traditional farming practices cover over 12,000 hectares of the island, enabling the production of wine, fruits, and legumes in one of the driest regions of Europe.
In May 2025, Lanzarote’s agricultural system was recognised by the Food and Agriculture Organization of the United Nations (FAO) as a Globally Important Agricultural Heritage Systems (GIAHS), celebrating the island’s biodiversity conservation and sustainable practices, as well as its contribution to food and livelihood security. FAO has a network of more than 100 unique agricultural systems in 29 countries — from the erva-mate agroforests of Brazil and ancestral terraces (梯田) in Mexico to traditional pear farms and white tea growing in China.
