When you look at the colorful rows of fruits and vegetables in the grocery store, you might think you’re getting all the nutrients you need. But recent studies show that today’s crops have fewer nutrients than what our grandparents ate decades ago. This decline is alarming and could affect our health in the future.
Over the past 70 years, many fruits, vegetables, and grains have lost significant amounts of protein, calcium, iron, and vitamins. A review in the journal Foods in 2024 called this a major challenge for future generations. This is especially important as more people are encouraged to eat plant-based diets for health and environmental reasons.
David Montgomery, a professor at the University of Washington, warns that this nutrient decline means our food is less effective at preventing chronic (慢性的) diseases. Even if you eat lots of fresh produce, what you’re eating today is less nutritious than what your grandparents ate, says Kristie Ebi, an expert in climate change and health.
The problem lies in modern farming practices. Methods that increase crop harvest often harm soil health. Irrigation, fertilization, and harvesting prevent the natural interactions between plants and soil fungi (真菌), reducing nutrient absorption. Climate change and rising carbon dioxide levels also play a role in lowering nutrient content.
A major study in 2004 found that 43 garden crops had less protein, calcium, iron, and vitamin C compared to 50 years earlier. More recent studies show similar trends in Australian vegetables and wheat, with significant drops in iron and protein.
This nutrient decline affects not just plant-based diets but also meat. Animals now eat less nutritious grasses and grains, making meat and dairy products less nutritious too.
Scientists urge us not to worry too much but to pay attention to how our food is grown. Montgomery says understanding the impact of farming practices gives us a new reason. As the population grows, we need to protect and restore our farmland to ensure healthy food for everyone.

Ageing is a natural process that affects everyone over time. It happens mainly because the cells in our body slowly wear out. While signs like wrinkles, gray hair, and age spots are visible on the outside, ageing also deeply impacts internal organs, physical strength, and mental function.
As we age, our cells renew themselves more slowly. Their membranes (the walls around the cells) harden, which can affect how nutrients enter and waste leaves the cell. Damaged tissues take longer to repair, and overall organ performance may not be as good as before. In the brain, a protective coating around nerve fibers wears down, sometimes making it harder to recall memories or learn new things.
Certain physical changes become more noticeable with time. For example, cartilage (软骨) in the nose and ears can change, which may make these features appear larger. Muscle and bone mass also decrease, leading to reduced strength and height. While ageing begins from early life, research suggests its pace may quicken around certain ages — studies point to noticeable shifts in the mid-30s, mid-40s, early 60s, and late 70s, often linked to changes in immune function, heart health, and metabolism.
Hearing and vision also commonly change with age. Many older adults experience presbycusis, a gradual hearing loss due to wear on the inner ear. Eyesight often declines as eye muscles weaken, lenses lose flexibility, and tear production decreases. These changes are normal, but sudden or severe loss should be checked by a doctor.
Although ageing cannot be fully stopped, certain habits can support healthy ageing. Regular aerobic and strength exercise helps maintain heart health, muscle mass, and balance. A balanced diet rich in vegetables, whole grains, and lean proteins is also beneficial. Currently, such a way of life remains the most reliable way to slow down ageing.

What a Messy Desk Says About You
For some time, psychologists have been studying how personality traits affect health and health-related choices. Not surprisingly, they have found that people blessed with innate conscientiousness, meaning that they are organized and predictable, typically eat better and live longer than people who are disorderly. They also tend to have immaculate offices.
What has been less clear is whether neat environments can produce good habits even in those who aren’t necessarily innately conscientious. To find out, researchers at the University of Minnesota conducted a series of experiments. In the first experiment, they randomly assigned a group of college-age students to spend time in two office spaces, one of which was very neat, the other wildly cluttered (乱堆) with papers and other work-related stuff. The students spent their time filling out questionnaires unrelated to the study. After 10 minutes, they were told they could leave with an apple or a chocolate bar. Those students who sat in the orderly office were twice as likely to choose the apple as those who sat among the mess.
A second experiment, however, found that working in chaos has its advantages, too. In this one, college students were placed in a messy or a neat office and asked to dream up new uses for Ping-Pong balls. Those in messy spaces generated ideas that were significantly more creative, according to two independent judges, than those in offices where stacks of papers and other objects were neatly arranged.
The results were something of a surprise, says Dr. Vohs, the leader of the study. Few previous studies found much virtue in disorder. The broken window theory, proposed decades ago, holds that even slight disorder and neglect can encourage indifference and poor discipline.
But in the study by Dr. Vohs, disordered offices encouraged originality and a search for novelty. In the final portion of the study, adults were given the choice of adding a health “boost” to their lunchtime smoothie that was labeled either “new” or “classic.” The volunteers in the messy space were far more likely to choose the new one; those in the tidy office generally chose the classic version. “Disorderly environments seem to inspire breaking free of tradition,” Dr. Vohs and her co-authors conclude in the study, “which can produce fresh insights.”
The implications of these findings are also practical. “My advice would be, if you need to think outside the box for a future project”, Dr. Vohs says, “then let the clutter rise and free your imagination. But if your primary goal is to eat well or to go to the gym, pick up around your office first. By doing this, the naturally messy can acquire some of the discipline of the conscientious.”
