UNIT 3 FOOD AND CULTURE Like so many other ABCs (Americanborn Chinese) and younger firstand secondgeneration Chinese immigrants(移民), sisters Sarah and Kaitlin Leung reached a point in their adult lives when they started to long for the Chinese food they'd grown up on, but found it really difficult to learn how to prepare it. There was such a “representation_gap”, as Sarah puts it, in terms of what kinds of cuisines were noticeably featured in those early days of TV celebrity chefs and the emerging food blogosphere(博客圈). As it turns out, though, the Leungs were uniquely positioned to do something about it. Bill, the father, had spent years cooking beef at his family's Chinese American takeout restaurant. Judy, the mom, was born and raised in Shanghai and had deep knowledge about traditional Shanghainese cooking. Meanwhile, the two sisters had grown up in the New Jersey suburbs, eating their parents' food, but also immersed in America's own foodobsessed culture. So, in 2013, the Leungs started a food blog The Woks of Life. What distinguished their blog from others was that the intergenerational heritage(传承) of knowledge that the Leungs were so eager for was baked right into the concept-The four family members took turns posting recipes, each sharing their own favorites, tapping into their own areas of expert knowledge. Kaitlin stresses that The Woks of Life follows a long line of pioneersfolks like Joyce Chen, Martin Yan and Ming Tsai, who first started to bring Chinese home cooking into the mainstream in the U.S. “We feel proud that we have made a meaningful mark over the past decade, casting light that there's a huge demand for these recipes,” she says. “It's about representation, yes, but there's also a huge demand. Asian Americans look to reconnect with the food of their heritage.” 1.What do the underlined words “representation gap” in Paragraph 1 refer to? A.The shortage of Chinese chefs. B.The lack of Chinese food recipes. C.The gap between young and old ABCs. D.The difference between chefs and bloggers. 2.What is the purpose of Paragraph 2? A.To prove how unique the Leung sisters are. B.To show why the Leung sisters prefer Chinese food. C.To point out the Leungs' advantage to start a food blog. D.To stress the Leung sisters' love for home cooking food. 3.What makes “The Woks of Life” special? A.The concept of baking food. B.The large number of followers. C.The bloggers' way of posting recipes. D.The intergenerational heritage of knowledge. 4.What is the significance of “The Woks of Life”? A.It strengthens bonds between individuals. B.It marks the popularity of Chinese cuisine. C.It has developed many new Chinese recipes. D.It links Asian Americans with their food tradition. 结合第一段的关键表述“in terms of what kinds of cuisines were noticeably featured in those early days of TV celebrity chefs and the emerging food blogosphere” 可知,在电视名厨和新兴博客圈,哪些菜肴明显受到关注,存在“代表性差距”。 根据第一段内容可知,在美国很难找到中餐菜谱;根据第二段主题句“As it turns out, though, the Leungs were uniquely positioned to do something about it.” 根据第三段第二句“What distinguished their blog from others was that the intergenerational heritage(传承) of knowledge... their own areas of expert knowledge.” 根据倒数第一段最后一句“Asian Americans look to reconnect with the food of their heritage.” In order to help discover spoilage and reduce food waste for supermarkets and consumers, researchers have developed new lowcost, smart phonelinked, ecofriendly spoilage sensors for meat and fish packaging. One in three UK consumers throw away food just because it reaches the useby date, but 60% of the £12.5 billionworth of food we throw away each year is safe to eat. The researchers, whose findings were published in ACS Sensors, say the sensors could also eventually replace the useby date-a widely used indicator of being fresh and eatable. The sensors cost two US cents each to make. Known as “paperbased electrical gas sensors (PEGS)”, they detect spoilage gases like ammonia (a poisonous gas with a strong unpleasant smell) in meat and fish products. The information provided by the electronic nose is received by a smart phone, and then you can know whether the food is fresh and safe to eat. The Imperial College London researchers who developed PEGS made the sensors by printing carbon electrodes onto a special type of paper. The materials are ecofriendly and harmless, so they don't damage the environment and are safe to use in food packaging. The sensors, combined with a tiny electronic system, then inform nearby mobile devices, which identify and understand the data about spoilage gases. Lead author Dr Firat Guder of Imperial's Department of Bioengineering, said, “Although they're designed to keep us safe, useby dates can lead to eatable food being thrown away. They don't always reflect its actual freshness. In fact, people often get sick from foodborne diseases due to poor storage, even when an item is within its useby date.” “These sensors are cheap enough so we hope to see supermarkets using them within three years. Our goal is to use PEGS in food packaging to reduce unnecessary food waste.” The authors hope that PEGS could have applications beyond food processing, like sensing chemicals in agriculture, air quality, and detecting disease markers in breath like those involved in kidney disease. 5.What is the function of PEGS according to the text? A.To improve the taste of foods. B.To improve the service of stores. C.To help supermarkets store foods. D.To help people test food freshness. 6.What role does the smartphone play while PEGS are functioning? A.It acts as an electronic nose. B.It reads the data collected by PEGS. C.It helps print the gas sensors onto paper. D.It discovers the spoilage gases from foods. 7.What does Dr. Firat Guder say about useby dates? A.They are not completely reliable. B.They can help reduce food waste. C.They are based on scientific research. D.They are not accepted by the consumers. 8.What does the author mainly talk about in the text? A.The process of researching spoilage sensors. B.A new technology in packaging to reduce food waste. C.The application of spoilage sensors beyond food processing. D.The influence of useby dates on supermarkets and consumers. 根据第四段“The sensors cost two US cents each to make. Known as ‘paperbased electrical gas sensors (PEGS)’, they detect spoilage gases like ammonia (a poisonous gas with a strong unpleasant smell) in meat and fish products. The information provided by the electronic nose is received by a smart phone, and then you can know whether the food is fresh and safe to eat.(每个传感器的制造成本为2美分。它们被称为‘纸质电气气体传感器(PEGS)’,可以检测出肉类和鱼类产品中的氨气(一种有强烈难闻气味的有毒气体)等腐败气体。 电子鼻子提供的信息被智能手机接收,然后你就可以知道食物是否新鲜和安全的食用。)”可知,PEGS的功能是帮助人们检测食物的新鲜度。] 6.B [细节理解题。根据第五段中“The sensors, combined with a tiny electronic system, then inform nearby mobile devices, which identify and understand the data about spoilage gases.(这些传感器与一个微型电子系统结合,然后通知附近的移动设备,这些移动设备可以识别并了解有关变质气体的数据。)” 根据第六段“Lead author Dr Firat Guder of Imperial's Department of Bioengineering, said, ‘Although they're designed to keep us safe, useby dates can lead to eatable food being thrown away. They don't always reflect its actual freshness. In fact, people often get sick from foodborne diseases due to poor storage, even when an item is within its useby date.’(帝国理工大学生物工程系的第一作者Firat Guder博士说:‘尽管保质期是为了保护我们的安全,但它可能导致可食用的食物被扔掉。它们并不总是反映它的实际新鲜度。事实上,人们经常会因为储存不当而患上食源性疾病,即使是在保质期内。’)”可推知,Firat Guder博士认为保质期不是完全可靠的。] 8.B [主旨大意题。根据第一段“In order to help discover spoilage and reduce food waste for supermarkets and consumers, researchers have developed new lowcost, smart phonelinked, ecofriendly spoilage sensors for meat and fish packaging.(为了帮助超市和消费者发现食物的腐败现象,减少食物浪费,研究人员开发了一种新型低成本、智能手机连接、环保的变质传感器,用于肉类和鱼类的包装。)” To fully appreciate Australian cuisine, you have to consider the unique nature of its wildlife and geography. For one thing, there are the wide plains in the interior of the country, which are home to millions of grazing animals. For another, there is Australia's long coastline, which is next to all the riches of the sea.__1__ One of the most popular red meats in Australia is also unique to the continent: kangaroo. This may seem strange as the kangaroo is a national symbol of Australia. However, in recent years, kangaroos have increased in number to around 45 million. These kangaroos wander onto the roads and into cities, making trouble. __2__ As a consequence, the government is encouraging people to use these animals as food, and kangaroo has become one of the most popular items on the Australian dinner table. As for seafood, many of the first Europeans who came to Australia loved the sea.__3__ Since the coastline is so long, each region has its own dishes that are related to the seafood found in its waters. But then, how is all this food cooked? Perhaps the favourite way of cooking food in Australia is the barbecue. __4__ It is a time for friends and relatives to get together and have fun. Even strangers passing through will be offered a seat, a cold drink, and something off the grill. __5__ As Australia is a diverse country with people from many nations, Australian cooking now has flavours and cuisines from around the globe. No matter who you are and no matter what cuisine interests you, you are always sure to find a warm welcome and a full plate waiting for you in Australia. A.Australia is made up of many regions. B.Beyond this, what is Australian cooking? C.Casual friendliness is the key to such meals. D.People need to pay attention to the protection of kangaroos. E.Their increased numbers have also harmed plants and other wildlife. F.Perhaps this is one reason why so many Australians live near the coast. G.It is no wonder that much of Australian cuisine centres around red meat and seafood. 1.G [根据前文“For one thing, there are the wide plains in the interior of the country, which are home to millions of grazing animals. For another, there is Australia's long coastline, which is next to all the riches of the sea.(一方面,这个国家的内陆有广阔的平原,那里是数百万食草动物的家园。另一方面,澳大利亚有漫长的海岸线,它毗邻海洋的所有财富。)”和后文“One of the most popular red meats in Australia is also unique to the continent: kangaroo.(澳大利亚最受欢迎的红肉之一也是这片大陆所独有的:袋鼠肉。)”以及“As for seafood, many of the first Europeans who came to Australia loved the sea.(至于海鲜,许多第一批来到澳大利亚的欧洲人都喜欢大海。)” 2.E [根据前文“However, in recent years, kangaroos have increased in number to around 45 million. These kangaroos wander onto the roads and into cities, making trouble.(然而,近年来,袋鼠的数量已经增加到大约4 500万只。这些袋鼠在道路上游荡,进入城市,制造麻烦。)”可知,此处是讲袋鼠数量大增带来的麻烦,所以选项E“它们数量的增加也伤害了植物和其他野生动物。”切合文意。] 3.F [根据前文“As for seafood, many of the first Europeans who came to Australia loved the sea.(至于海鲜,许多第一批来到澳大利亚的欧洲人都喜欢大海。)” 4.C [根据后文“It is a time for friends and relatives to get together and have fun. Even strangers passing through will be offered a seat, a cold drink, and something off the grill.(这是一个朋友和亲戚聚在一起玩的时间。即使是路过的陌生人也会得到一个座位,一杯冷饮和一些从烤架上取下来的东西。)”和前文“Perhaps the favourite way of cooking food in Australia is the barbecue.(也许在澳大利亚最受欢迎的烹饪方式是烧烤。)” 5.B [根据后文“As Australia is a diverse country with people from many nations, Australian cooking now has flavours and cuisines from around the globe.(由于澳大利亚是一个多元化的国家,人们来自许多国家,澳大利亚烹饪现在有来自世界各地的风味和菜系。)” It's common to see a barista(咖啡师) create coffee art,but it's a whole different ball game doing the same thing with tea.
