① One morning, I got up early and decided to make an apple pie for my mum. I called my grandma for help, followed a TV program to make jam and waited excitedly. It’s common to see people create coffee art, but it’s a whole different ballgame doing the same thing with tea. After many years of research and practice, Han Zheming has managed to perfect the skill, creating tea art in cups, or dian cha in Chinese, which used to be a ritual (仪式) during the Song Dynasty (960-1279).
Over the past six years, the 40-year-old Shanghai man has used tea and spoons to create nearly 200 patterns (图案) based on ancient paintings.
“It is similar to the foam (泡沫) on top of a cup of coffee, except that it is made of tea rather than milk,” Han says. He wants to bring the old ritual back to modern life and have more people understand its beauty. “It’s like adding bells and whistles to tea and giving people a stronger sense of ritual, so drinking tea is more fun,” Han explains. “Dian cha in modern tea making also improves the taste of tea.”
In the Song Dynasty, the common way of having tea was through dian cha. The process begins with hot water being poured over fine tea to create a paste (糊状物), then more hot water is slowly added and the tea is repeatedly whisked (搅拌) by hand with a bamboo stick.
This action of pouring hot water is called dian, and that’s how the name dian cha appeared. It usually needs whisking the mixture between 180 and 200 times before the water and the tea are fully mixed and the foam appears. Then, one can begin to make artistic designs on the foam.
It is believed that this way later spread to other parts of East Asia, including Japan, where similarities can be seen in the way matcha (抹茶) is prepared today.
Han has always been fascinated by the culture and art of the Song Dynasty under the influence of his mother. In order to bring back the ancient art to life, Han often goes to museums to study Song paintings. “When it comes to traditional painting, it is about the soft brush against the hard paper, but with the tea, it is the other way round,” Han says. “It’s the hard spoon against the soft foam.” Han added, “It has to be careful but quick work, before the foam disappears.”
