A carrot becomes soft, a fish turns white and delicious, and an egg gets hard after cooking. The magic behind them is the high temperature. When we cook, food changes in many ways. Have you ever thought about why people cook?
Cooking is a special and important skill only for people. No other animals in the world can cook food for themselves. Our close animal friends, like monkeys, love cooked food very much, but they cannot make it. Interestingly, they can wait quietly for people to make food ready for them.
About 1.8 million years ago, ancient (古老的) people had big bodies and brains but small teeth. How could they get enough energy? Scientists believe cooking was the key. Cooking made food much easier to eat and digest (消化). Raw food without cooking takes a lot of time and energy to chew (咀嚼). Wild animals spent 4 to 7 hours a day just chewing!
