Eating a plantbased diet has been shown to be very good for your heart and your overall health. In fact, a recent study found a young person could live an additional 13 years by eating more vegetables and legumes (豆类), as well as whole grains, fruit and nuts.
The findings of a new analysis of the diets of nearly 400,000 UK adults published on Monday in the journal Frontiers in Nutrition are rather shocking: Eating veggies, especially cooked ones, doesn't reduce your risk of heart disease over time.
“Our large study did not find evidence for a protective effect of vegetable intake on the occurrence of CVD (心血管疾病),” said Qi Feng, an epidemiologist at the University of Oxford, in a statement.
While the study found eating raw veggies could protect against heart disease, cooked vegetables did not.Any benefit went away when researchers factored in lifestyle factors such as physical activity, educational level, smoking, drinking, fruit intake, red and processed meat consumption, and use of mineral and vitamin supplements.
“Instead, our analyses show that the seemingly protective effect of vegetable intake against CVD risk is very likely to be accounted for by bias (偏差) ... related to differences in socioeconomic situations and lifestyles,” Feng said.
Don't start celebrating yet, veggie haters.Experts in the UK and United States quickly took exception to the study's conclusion.
“Although this study found that eating more vegetables wasn't associated with a lower risk of heart and circulatory diseases once other lifestyle and other factors were taken into account, that doesn't mean we should stop eating vegetables,” said Victoria Taylor, a senior dietitian at the British Heart Foundation, in a statement.
“The results are not surprising.Picking out one single component and assuming just adding it to the diet, e.g., vegetables, is not likely to result in the desired effect,” Alice Lichtenstein, director and senior scientist at Tufts University's Cardiovascular Nutrition Laboratory, told CNN in an email.
“One thing that has become clear over the past decade is that we should not be looking at single foods or nutrients, rather the whole dietary pattern,” said Lichtenstein.

Monica Bertagnolli is an oncologist (肿瘤学家) at Brigham and Women's Hospital and a professor of surgery at Harvard Medical School.Growing up in Wyoming, she was well aware of the lack of health care resources in rural areas.Access to indepth care for cancer patients is limited. She's worked throughout her career to change that.
In Wyoming, there's a great distance to travel between where people live and where they can find a cancer specialist.“If you need treatments and they have to be administered every day, and if it's 120 miles from where you live, that ends up being a huge barrier to receiving the kind of care you need.”
And now Monica serves as the vice president of the Coalition (联盟) of Cancer Cooperative Groups (CCCG)—an international network of individuals who work to improve the quality of life and survival of cancer patients by increasing participation in cancer clinical trials.
She said, “One of the really important things is, we're trying to make sure that cancer clinical trials can get to every single patient who needs them in my own state.” The coalition set up sites in northern and southern Wyoming that are able to run clinical trials. Before those trials became available, patients would usually go to Denver or Salt Lake City—a threetosevenhour drive.
Monica's efforts to increase access to health care for her rural Wyoming patients also include helping to develop new policies that will allow patients to participate in more clinical trials, and linking them with a regional doctor who can get them access to the care they need.
In addition to the clinical trials, Monica said that technology's progress like better cell phones and internet service in the mountains of Wyoming, as well as social media, has helped rural residents stay in touch with loved ones and medical professionals despite their distance. She is trying to advocate strongly for those changes to continue.
“I still consider myself part of Wyoming and I am very devoted to making sure that patients can get access to care.”

When stressed out, many of us turn to junk food for comfort. But new University of Colorado Boulder research suggests this strategy may have the opposite effect. The study found that in animals, a highfat diet destroys resident gut (肠道) bacteria, through a complex pathway connecting the gut to the brain, influences brain chemicals in ways that fuel anxiety.
“Everyone knows that these are not healthy foods, but we tend to think about them only in terms of a little weight gain,” said lead author Lowry.“If you understand that they also impact your brain in a way that can promote anxiety, that makes the risk even higher.” Lowry's team divided adolescent rats into two groups: Half got a standard diet of about 11% fat for nine weeks; the others got a highfat diet of 45% fat, consisting mostly of saturated (饱和) fat from animal products.
After nine weeks, the animals underwent behavioural tests. When compared to the former group, the group eating a highfat diet, not surprisingly, gained weight. But the animals also showed significantly less diversity of gut bacteria.Generally speaking, more bacterial diversity is associated with better health, Lowry explained.
The highfat diet group also showed higher expression of three genes involved in production and signalling of the neurotransmitter serotonin (神经递质血清素), which is associated with stress and anxiety. While serotonin is often billed as a “feelgood brain chemical,” Lowry notes that it can lead to anxietylike responses in animals.
“To think that just a highfat diet could change expression of these genes in the brain is extraordinary,” said Lowry.“The highfat group essentially had a high anxiety state in their brain.”
Lowry stresses that not all fats are bad, and that healthy fats like those found in fish, olive oil, nuts and seeds can be good for the brain. His advice is: Eat as many different kinds of fruits and vegetables as possible.
