Xi Zhinong was born in a small town in Yunnan Province. When he was young, he moved to Kunming with his mother. Feeling like a caged (笼中的) bird in a big city, he was bored with the busy and noisy city life and looked forward to nature.
His chance soon came. In 1983, he helped shoot (拍摄) a documentary about birds. That experience led him to learn photography and take photos of flying birds.
In the 1980s, the Internet was not that popular in China and cameras were expensive. He managed to borrow a camera and threw himself into studying how to use it. During that time, the library became his favourite place where he first read some magazines about nature. It opened a door for him to connect with nature.
In 1992, a research program was organized to protect a type of unusual monkeys which only live in China. Usually, the home of these monkeys has half a year long winters. It created great challenges for Xi Zhinong’s work, but he never drew back. “I didn’t see the monkeys in the wild until I went into the mountains the third time,” said Xi Zhinong. He went into the snowy mountains six times just to get valuable photographs of the monkeys.
Three years later, his works won international prizes. People around the world began to pay attention to the protection of wild animals in China.
In order to call on tons of people to protect wildlife with cameras, he started “China Wildlife Photography Training Camp”. He hopes that more young people will join in for the nature protection.

Milk is a nutrient-rich food, but its safety cannot be ignored. For a long time, raw milk (unpasteurized milk) was considered “fresh and natural,” but it actually hides significant health risks. Raw milk may contain harmful germs like E. coli, Listeria, and Salmonella, which can enter the milk during milking or transportation. These germs are particularly dangerous for vulnerable groups, including children under 5, adults over 65, pregnant women, and people with weakened immune systems.
The key to solving milk safety issues lies in pasteurization, a method invented by the French scientist Louis Pasteur. This process heats milk to a specific temperature for a certain period—commonly 72 degrees Celsius for 15 seconds—to kill harmful pathogens while preserving most of the milk’s nutrients. Unlike raw milk, pasteurized milk retains the nutritional benefits without the associated health risks, and it has greatly reduced milk-borne illnesses since the early 1900s. There are two main pasteurization methods today: low-temperature long-time (LTLT) and high-temperature short-time (HTST), with HTST being widely used in large and medium-sized dairy factories.
Proper storage and consumption are also critical for milk safety. Pasteurized milk must be refrigerated at 2-6℃ and consumed within 24 hours after opening. Unopened room-temperature milk (ultra-high temperature sterilized milk) can be stored in a cool, dry place but needs refrigeration after opening. Milk should be kept away from raw meat and seafood to avoid cross-contamination, and direct sunlight should be avoided as it accelerates nutrient loss. When milk develops flocculent precipitation, a sour taste, or a yellowish color, it must not be drunk.
To enjoy milk safely, always choose regular brand products within their shelf life and check labels to ensure you are buying pasteurized milk. Following these guidelines allows us to benefit from milk’s nutrition while protecting our health.
