The main reason is that modern farming has focused more on producing large amounts than on improving taste. But Chinese scientists have recently made an important discovery that may soon change this. A team led by Professor Hang Sanwen from the Chinese Academy of Agricultural Sciences has found a way to bring back the delicious flavor of tomatoes without lowering production. They discovered how to genetically “release the sugar brake” in tomatoes, making them much sweeter while still keeping high production.
