A decade ago, I attended a banquet in Guangzhou where the food was exceptional. The bird's nest soup, made from chicken and possibly ham with dried scallops (干贝), was gentle and slippery. The sea cucumber was rich and sticky, and the fish was sparklingly fresh and steamed to perfection. However, what stood out was the plain white soup of broth (肉汁), served at the end. It was simple, plain, and perfect.
Ending a banquet with soup may seem odd to Westerners, who are used to sweets at the end of meals. But as an English food writer named Fuchsia Dunlop explains in her book Invitation to a Banquet, soup is a unique expression of a chef's art, much like a singer's voice. Invitation to a Banquet is Dunlop's seventh book. Unlike her other books on Chinese cuisine such as The Food of Sichuan and Revolutionary Kitchen, this one is not a cookbook. Eat more when you are stressed? You're not alone.More than a third of the participants in a survey said they change their diets during stressful times.

Researcher Joe Hibbeln believes the answer is yes.He has spent the past two decades researching links between the omega3 fatty acids found in fish and emotional health.He also points to clinical trials that have found that omega3 fatty acids may help control depressive symptoms.And a study of schoolchildren in England linked omega3 fatty acids to more prosocial behavior.
Drew Ramsey, a psychiatrist at Columbia University, says a nutrientrich diet is best for beating stress.He points to his favorite breakfast:scrambled eggs (炒鸡蛋) mixed with the greens and topped with pumpkin seeds.With this meal, you are covering all your bases, Ramsey says.The eggs are a good source of B vitamins and protein, which can be more satisfactory than a carbohydratesbased breakfast.The greens are incredibly nutrientdense, and are a good source of vitamin A, vitamin K and potassium.And the pumpkin seeds are a good source of magnesium, which is thought to play a role in fighting off anxiety — and zinc, which may help boost the immune system.
The bottom line? The foods we choose can't magic away stress.But Ramsey says he believes “There is a very,very strong connection between food and mood”.
