Have you ever wondered why some foods taste amazing while others don’t? Many people think taste is simply something we feel on our tongues, but the truth is far more interesting. The way we taste food is not so simple as you might think. It’s true that when we put food in our mouths, tastebuds on our tongues help us work out what we’re eating.
However, the experience of what we call taste doesn’t just happen in our mouths. In fact, 75 to 95 percent of what we call taste is actually about how a food smells. When we eat, tiny smell particles travel to our noses, sending messages to our brains. Without the sense of smell, even our favorite foods would taste boring.
What’s more, our brains take information from all our senses—sight, smell, touch and even sound, to create the final experience of taste. For example, if we see a food that is red, our brain will guess that it is sweet. As a result, it may taste sweeter than it really is. Green foods may taste more sour. Black foods may taste a little more bitter (苦的), and white foods taste a little more salty. Even shapes can affect the way we taste. A study on university students shows that those who like ordering food online are easy to feel upset. A research team did research at 18 universities. 26 The longer a student spends online each day, the worse the self-evaluation is and the higher the possibility of being upset is.
