Growing up in an Italian-American household was, for me, pretty special. My mother, Gina, an immigrant (移民) from Calabria, held onto so many of her family’s traditions that at times, in spite of the fact that I was living in the United States, our home felt like part of Italy.
To this day, my mother only speaks to me in Italian, and our conversations are, for the most part, in her mother tongue. And most of those conversations are about food. For us, Italian food is an important part of our lives.
My mom grew up on a farm where the fruits of their labor directly turned into the food on the table, and wasting any of it was unacceptable. Every day was “Thanksgiving” because times were tough, so how food found its way onto the table was a holy (神圣的) matter. One of the greatest lessons my mother taught me in the kitchen is to cook what you have on hand, and to never let anything go to waste.
So, when I take a perfect little arancini (意大利饭团) out of the hot oil, I am immediately transported back to my childhood. I am a little girl getting off the bus and running through the back door to the smell of the food. This small snack emblematizes so many important parts in my life about my heritage through food.
Heritage food is Sunday dinner with the family. When we recreate dishes like that, we feel a sense of pride and also a sense of continuity. Climate change is increasing risk to eye health in multiple ways. First, it is making the planet hotter. Body temperatures reaching 40 degrees Celsius can cause heatstroke, a condition that disturbs biological processes throughout the body. In the eyes, heatstroke damages the natural defense systems that normally counteract the buildup of harmful molecules called reactive oxygen species.
The eye lens is made up of crystalline proteins that must remain organized to remain clear. Reactive oxygen species can damage these proteins, forming cloudy areas that lead to cataracts.

And though the typical age of onset of cataracts is 60 or older, cataracts in people aged 15 to 49 were more common in regions where a high percentage of people work in agriculture.

Growing up in an Italian-American household was, for me, pretty special. My mother, Gina, an immigrant (移民) from Calabria, held onto so many of her family’s traditions that at times, in spite of the fact that I was living in the United States, our home felt like part of Italy.

Climate change is increasing risk to eye health in multiple ways. First, it is making the planet hotter. Body temperatures reaching 40 degrees Celsius can cause heatstroke, a condition that disturbs biological processes throughout the body. In the eyes, heatstroke damages the natural defense systems that normally counteract the buildup of harmful molecules called reactive oxygen species.
The eye lens is made up of crystalline proteins that must remain organized to remain clear. Reactive oxygen species can damage these proteins, forming cloudy areas that lead to cataracts.
Since the lens can’t regenerate the proteins, the more time one spends in the heat, the greater the risk of developing cataracts. In a study covering 10 years in southern Spain, researchers found an additional 370.8 cases of cataracts per 100,000 inhabitants for each degree Celsius rise in the maximum average temperature each year. And though the typical age of onset of cataracts is 60 or older, cataracts in people aged 15 to 49 were more common in regions where a high percentage of people work in agriculture.
Another way global warming is contributing to eye disorders is by increasing our exposure to UV radiation. Some of this is driven by behavior — people tend to spend more time outdoors when it’s warm. More UV radiation also generates reactive oxygen species that damage the eye lens, and can directly damage the DNA of lens cells.
Beyond these direct impacts, climate-driven droughts cause food insecurity that can lead to lack of essential nutrients, such as copper and vitamins B12, B1 and B9, that risk damaging the eye-related nerve.
