Ask a cook from Guangdong about “wok hei” (锅气), and you might hear it described as “that smoky taste”. Steph Li, the owner of Savory Kitchen, gives a better way to describe it. She says it is a great taste. This special taste comes from how restaurants use oil. It also comes from the nice brown color of the food when it’s cooked perfectly. My father always enjoyed wok hei the most. To him, the way restaurants cook is what makes food good.
Real wok hei only comes out when food is cooked with strong heat, which is hard to do on most home stoves (厨灶). Having cooked in the kitchen for fifteen years, I’ve spent a long time perfecting this great taste. Last year, I finally made it.
The secret is not just using a hot stove. Using the right pans is also very important. Steph Li says carbon steel (碳钢) pans work best. She shares two easy ways for home cooks: First, pour soy sauce (酱油) around the side of the pan to make a special burnt soy sauce taste; second, use a kitchen torch (喷火枪) to slowly go over the food a few times, a method called “torch hei (火烧)”.
When I cook with my black iron pan and add the burnt soy sauce, the whole kitchen is filled with a wonderful smell. The food gets that beautiful dark brown color just like in restaurants. At these happy moments, I remember my father’s love for wok hei. It feels like I can hear him opening my kitchen door and saying those words I always wanted to hear, “I like the food here.” This special and distinctive taste makes all my hard work worth it.

One day in the hot summer, I noticed an old woman walking slowly with a walker when I was driving home. She carried two heavy bags that seemed to pull her down. Writing a good article in 20 minutes during tests is hard work that needs both quick thinking and new ideas. While AI seems to help with such tasks, new research shows this help may bring problems to how we think.
