New brain scans (扫描) have found a part of the brain that mixes taste and smell to make flavor. Smell and taste are very closely connected — the smell of your favorite food can make you think of its taste right away. Putu Agus Khorisantono, a scientist in Sweden, says these senses are connected the moment you bite into something. In our bodies, many food chemicals stick to receptors (受体) on the tongue for sweet, salty, sour or bitter tastes. Other compounds, called back-of-the-nose smells, travel through the roof of the mouth and stick to receptors at the back of the nose. Scientists have long tried to find where in the brain taste and smell are connected. Khorisantono’s team did a study with 25 people. First, they trained these people to connect mixtures of smells and tastes with certain flavors. Then, they gave them tiny drops of drinks that activated either taste or back-of-the-nose smell receptors. While these people tried the drinks, the researchers scanned their brain activity. To analyze the scans, the team used machine learning. They trained computer programs on different parts of the brain and found the best program was trained on a part called the insula (脑岛). Before, scientists thought the insula only reacted to taste. But later research found some insula cells respond to both taste and smell. In the new study, the scans of the insula looked almost the same whether these people got a flavor’s smell or taste. This means the insula likely understands these signals in a similar way. Other parts of the brain that worked well may get flavor signals from the insula. The findings were published in Nature Communications on September 12. The insula is hard to study because it’s deep in the brain. Another scientist Ivan de Araujo says advanced methods like machine learning are changing that. He adds the findings could explain why people like some foods and dislike others. His team is now testing if front-of-the-nose smells, like those from bakeries, also cause the insula to respond. 12.
