How would you describe the taste of a mushroom? Is it sweet? Sour? Salty? Bitter? Or maybe it’s something else—umami. Umami gives food a full, mouthwatering taste. People call it the “fifth taste”.
A Japanese scientist named Kikunae Ikeda discovered umami first. Once, he noticed that seaweed (海藻) soup, a common Japanese dish, didn’t taste like the other four tastes. He began studying the soup, and in 1908, he found it was something called glutamate that made it taste special. He then mixed glutamate with salt and created a way to make MSG (味精). Ikeda decided to call the new taste “umami” until he could think of a better name. But it seems he never did.
At first, people didn’t think there was a fifth taste because umami isn’t a strong taste, and it often mixes with salty or sour tastes. In fact, it took almost 100 years for people to believe Ikeda’s discovery. In 2000, scientists found umami receptors (感受器) in our brains (大脑). In 2002, they found more receptors on our tongues (舌头).
