Get an A+ in Food Safety This School Year
As the school year begins, one often overlooked item deserves a spot on every checklist: food safety! Here are some guidelines to keep food safe when packing your lunches.
Clean — Recently, the U.S. Department of Agriculture (USDA) has conducted an observational study on food preparation, which showed that only 44% of the participants attempted to wash their hands before meal preparation, a failing grade no matter how you look at it. To get an A, wet hands, apply soap, rub for at least 20 seconds, rinse, and dry with a clean towel before, during, and after preparing food, and before eating.
Separate — Avoid spreading germs when preparing foods. Use one cutting board for raw meats and another for vegetables, fruits, and ready-to-eat foods. When packing, keep foods that spoil easily, such as prepared meats, in a special lunchbox with a cold source, like a frozen gel pack. Do not reuse packaging such as resealable plastic bags, as they can spread bacteria.
Chill — You’ll pass the final “food safety exam” by never leaving food out of refrigeration for over two hours. Leaving food out too long at room temperature can cause bacteria to grow to dangerous levels that can cause illness. Bacteria grow most rapidly in the range of temperatures between 4℃ and 60℃, doubling in number in as little as 20 minutes. This range of temperatures is often called the “Danger Zone”.
Caution — Never taste food to determine its safety. When in doubt, throw it out. While you may have substitute teachers, there is never a substitute for food safety.

I remember when I started telling people about my upcoming solo (独自的) travel to Mongolia, I was met with surprise and often confusion. My manager at the time gave me a funny look and warned me against going there. I didn’t panic. I’d done my research. Mongolia wasn’t as dangerous as people thought — in fact, it’s far safer than a lot of more frequented countries, like South America.
The thing about Mongolia is… no one has been there. I don’t know a single other person in my life who has been there. Except for the friends I made while I was there.
That’s the thing about solo travel — you don’t technically have to do it alone. Since Mongolia held some risks to it and is considered one of the most remote regions in the world, I decided to join a small-group tour.
I admit I was a little nervous. Looking up past trips on this company’s website, it looked like it was a whole bunch of couples that frequented these tours. I started picturing six couples, enjoying a Mongolian sunset… and then little old me. Just off to the side, enjoying it on my own.
When I arrived in Ulaanbaatar, the capital of Mongolia, and met the rest of the tour, I was both surprised and thrilled to realise that, of the ten people on tour, there was only one pair. Everybody else was there on their own. And instead of sitting off to the side like I’d feared, I’d been tent-paired with a lovely young American girl called Annie. On what other occasions might I have met her if not for this solo trip? The decision to travel solo, to not let the fact that I didn’t have a travel companion stop me, was what brought us together.
And that’s the beauty of travelling solo. When I’m alone, I’m more likely to branch out and talk to the locals and strangers, even if there’s a language barrier. And, in my experience, most people are good people. Start up a conversation, ask questions, and be curious. Most importantly: don’t be a tourist. Be a traveller.

Scientists are advancing forward in brain-computer interface (BCI) technology, which can translate our thoughts into text or sound.
It’s essentially an inner speech decoder (解码器), developed by researchers from institutions across the US. In tests on four volunteers with severe disabilities, the decoder has an accuracy rate of up to 74 percent in translating thoughts into audible (听得见的) speech. The potential here is for a BCI that can help those with speech disabilities to communicate more effectively than ever before.
Previous BCIs have relied on brain activity that is created when a person tries to speak or write, even though their bodies cannot carry out the action. This new technology gets a step closer to the source. “If you just have to think about speech instead of actually trying to speak, it’s potentially easier and faster for people,” says neuroscientist Benyamin Meschede-Krasa, from Stanford University in the U.S.
Machine learning was used to train the BCI to connect brain signals to words as the four participants thought about them. The researchers found that there was in common between certain brain patterns when the volunteers tried to speak and when they only imagined words and phrases. Despite this, the signals could be distinguished from each other. With some probability calculations thrown in, the new BCI can recognize up to 125,000 words using only inner speech. “We found that we could decode these signals well enough to demonstrate a proof of principle, although still not as well as we could with attempted speech,” says neuroscientist Frank Willett, from Stanford University.
There’s still a long way to go there, and the BCI often falls far short of that 74 maximum accuracy rating. However, by employing more advanced technology, the researchers are confident that the system can be quickly improved over the next few years. “This work gives real hope that speech BCIs can one day restore communication that is as fluent, natural, and comfortable as conversational speech,” says Willett.

Get an A+ in Food Safety This School Year
As the school year begins, one often overlooked item deserves a spot on every checklist: food safety! Here are some guidelines to keep food safe when packing your lunches.
Clean — Recently, the U.S. Department of Agriculture (USDA) has conducted an observational study on food preparation, which showed that only 44% of the participants attempted to wash their hands before meal preparation, a failing grade no matter how you look at it. Even fewer participants (3%) washed their hands properly by rubbing hands for at least 20 seconds. To get an A, wet hands, apply soap, rub for at least 20 seconds, rinse, and dry with a clean towel before, during, and after preparing food, and before eating.
Separate — Avoid spreading germs when preparing foods. Use one cutting board for raw meats and another for vegetables, fruits, and ready-to-eat foods. When packing, keep foods that spoil easily, such as prepared meats, in a special lunchbox with a cold source, like a frozen gel pack. Do not reuse packaging such as resealable plastic bags, as they can spread bacteria.
Chill — You’ll pass the final “food safety exam” by never leaving food out of refrigeration for over two hours. Leaving food out too long at room temperature can cause bacteria to grow to dangerous levels that can cause illness. Bacteria grow most rapidly in the range of temperatures between 4℃ and 60℃, doubling in number in as little as 20 minutes. This range of temperatures is often called the “Danger Zone”.
Caution — Never taste food to determine its safety. When in doubt, throw it out. While you may have substitute teachers, there is never a substitute for food safety.

I remember when I started telling people about my upcoming solo (独自的) travel to Mongolia, I was met with surprise and often confusion. My manager at the time gave me a funny look and warned me against going there. I didn’t panic. I’d done my research. Mongolia wasn’t as dangerous as people thought — in fact, it’s far safer than a lot of more frequented countries, like South America.
The thing about Mongolia is… no one has been there. I don’t know a single other person in my life who has been there. Except for the friends I made while I was there.
That’s the thing about solo travel — you don’t technically have to do it alone. Since Mongolia held some risks to it and is considered one of the most remote regions in the world, I decided to join a small-group tour.
I admit I was a little nervous. Looking up past trips on this company’s website it looked like it was a whole bunch of couples that frequented these tours. I started picturing six couples, enjoying a Mongolian sunset… and then little old me. Just off to the side, enjoying it on my own.
When I arrived in Ulaanbaatar, the capital of Mongolia, and met the rest of the tour, I was both surprised and thrilled to realise that, of the ten people on tour, there was only one pair. Everybody else was there on their own. And instead of sitting off to the side like I’d feared, I’d been tent-paired with a lovely young American girl called Annie. On what other occasions might I have met her if not for this solo trip? The decision to travel solo, to not let the fact that I didn’t have a travel companion stop me, was what brought us together.
And that’s the beauty of travelling solo. When I’m alone, I’m more likely to branch out and talk to the locals and strangers, even if there’s a language barrier. And, in my experience, most people are good people. Start up a conversation, ask questions, and be curious. Most importantly: don’t be a tourist. Be a traveller.

After Taylor Swift, the “Mona Lisa” is probably the most recognizable female face in the world. Every day around 20,000 people stare at the Leonardo da Vinci’s painting in the Louvre. Yet it became famous not due to an inviting semi-smile. Until a worker stole the masterpiece in 1911, it was still mostly unknown; viewers flooded in to see what a French newspaper called “an enormous, shocking, gaping blank”.
Classics of art, literature and music are supposed to carry some mysterious appeal that endures (持续存在) across the ages. But as Rochelle Gurstein, a historian, writes in a new book, the “timeless classic” is anything but. “What I believed was written in stone was actually written in water”, she argues. Classics come and go.
Take other distinguished works of art. Until the end of the 19th century Michelangelo’s “David” had only his fig leaf to protect him from the weather in Piazza della Signoria in Florence. He attracted more pigeons than visitors; visitors preferred the artists’ sculpture of Moses in Rome. Before the famous “Venus de Milo” was discovered in 1820, viewers were crazy about “Venus de Medici”, a delicate sculpture most people alive today have never heard of.
Much as in art, the classics of music and literature have not always been set in stone either. Today, Johann Sebastian Bach is often regarded as the master of classical music. But after his death in 1750, Bach’s compositions fell out of fashion until Felix Mendelssohn, a German composer, rediscovered them in the 1820s. Herman Melville’s masterpiece “Moby Dick” was largely forgotten until critics such as Raymond Weaver, a professor at Columbia University rescued him from the depth of a nobody around the centenary of his birth in 1919.
“The status of classics” depends on criticism and shows the power of critics to change the way people look at art. Tastes evolve (进化), and they should. But culture lives on only as long as people continue to argue over what counts as a classic today. The true enemy of the classic is silence.

Scientists are advancing forward in brain-computer interface (BCI) technology, which can translate our thoughts into text or sound.
It’s essentially an inner speech decoder (解码器), developed by researchers from institutions across the US. In tests on four volunteers with severe disabilities, the decoder has an accuracy rate of up to 74 percent in translating thoughts into audible (听得见的) speech. The potential here is for a BCI that can help those with speech disabilities to communicate more effectively than ever before.
Previous BCIs have relied on brain activity that is created when a person tries to speak or write, even though their bodies cannot carry out the action. This new technology gets a step closer to the source. “If you just have to think about speech instead of actually trying to speak, it’s potentially easier and faster for people,” says neuroscientist Benyamin Meschede-Krasa, from Stanford University in the U.S.
Machine learning was used to train the BCI to connect brain signals to words as the four participants thought about them. The researchers found that there was in common between certain brain patterns when the volunteers tried to speak and when they only imagined words and phrases. Despite this, the signals could be distinguished from each other. With some probability calculations thrown in, the new BCI can recognize up to 125,000 words using only inner speech. “We found that we could decode these signals well enough to demonstrate a proof of principle, although still not as well as we could with attempted speech,” says neuroscientist Frank Willett, from Stanford University.
There’s still a long way to go there, and the BCI often falls far short of that 74 maximum accuracy rating. However, by employing more advanced technology, the researchers are confident that the system can be quickly improved over the next few years. “This work gives real hope that speech BCIs can one day restore communication that is as fluent, natural, and comfortable as conversational speech,” says Willett.
