This fall,students at the University of Massachusetts found a new menu at their
dining commons:the "diet for a cooler planet"menu.This meant meat from animals
raised with a carbon-friendly approach.It mainly included vegetables that had been picked

"We wanted to let students participate in climate action by making choices about their
food,"says Kathy Wicks,director for University of Massachusetts Dining.The

are thinking about how their food choices factor into climate change.For many,small
choices at the grocery store,dining hall,and restaurant can feel more accessible than big-
ticket options like buying an energy-saving car.
Small changes in dietary habits may make a big difference.Climate activists often
target fossil fuels(化石撚料)and transportation systems,but studies point to the food
system as a significant contributor to global warming.According to Project Drawdown,a
research organization that weighs climate solutions,the way food is grown,transported,
and consumed accounts for about a quarter of the world's greenhouse gas production.Beef
is a regular target."If,on average,Americans cut a quarter pound of beef per week from
their diet,it's like taking 10 million cars off the road a year,"says Sujatha Bergen,
director of health campaigns for the Natural Resources Defense Council.Food waste
ranks third among climate solutions.While much waste occurs before consumers are
engaged-food left on the field because it does not fit appearance standards.Americans
also throw out a lot of food they have purchased:about 1600 worth a year per family of
four.
"People are beginning to understand that their food choices make a big impact on
climate,says Megan Larmer,director of regional food at the Glynwood Center for
Regional Food and Farming in New York.But she stresses sustainable change will need
to come from the whole food system.

Different dietary habits and food consumption have their own geographical
distribution,especially in China.The Chinese people have developed many traditional
foods through their long history and also led to a rich and diverse food culture.Due to the
geographical environment,there are some dietary and cultural differences between
Northern and Southern China.
Because of the cold and the vastness of the plain,Northeast China grow many cold-
resistant crops,which become the base for Northeastern cuisine.Di San Xian is the most
distinctive dish in Northeast China,which consists of potatoes,eggplants and green
peppers.Northeast Chinese dishes feature large quantity and fullness,which may come
from the heroic characteristics of the Northeast people.
Located in the southern part of China,Guangdong is a relatively warm and humid
(region.Due to the climate,the leading food in Guangdong has been tropical
crops such as rice since ancient times.The steamed rice noodle roll or Chang Fen,a
traditional Cantonese food,has several characteristics brought by the geographical
environment of Guangdong.In this dish,starch ()rice flour and water are mixed to
form a paste.Then the paste is spread across a multi-layered box or cloth to steam and
enhanced with meat,fish or shrimp.
Sichuan is located in the middle of China.Its main geographical feature is the Sichuan
Basin.The basin nature of Sichuan means that it is surrounded by high mountains with
high temperatures and humidity.Since peppers were introduced into China,Sichuan has
been the capital of spicy food in China because its unique geographical environment is very
suitable for the growth of peppers.Peppers are often used to cook Sichuan dishes,and
chicken with chilies,or La Zi Ji,is a popular one.Chicken,salt,peppers and other
simple ingredients can cook a deliciously spicy meal.The spicy flavor can also stimulate
people's appetite.
