Mold (霉菌) can grow on almost all kinds of food. Mold is usually green, white, black or gray. Mold makes food soft and changes its color. Moldy food tastes quite bad and it’s not safe to eat.
If you find mold in soft food, just throw it away. Bread, tomatoes and hot dogs are soft food. This kind of food allows mold to easily grow below its surface.

Tanghulu is a traditional snack from Northern China. People of all ages love it, especially kids.
It is usually made of haws (山楂), which are full of vitamin C. About 800 years ago, one of the emperor’s wives was sick and had a poor appetite. The doctor told her to eat 10 boiled haws with sugar before dinner. She felt better after two weeks. People heard about it and started making it too. They put haws on sticks, dipped them in hot sugary syrup (糖浆), and dried. The syrup made a hard and sweet shell around haws, like wearing a sugar jacket. They taste both sweet and sour at the same time.
Now people use many other fruits to make Tanghulu, such as cherry tomatoes, oranges, strawberries, blueberries, kiwis, bananas, or grapes. To make Tanghulu at home is super easy, and takes less than 20 minutes. Whether you’re looking for a quick snack for yourself or treating friends, Tanghulu is a good choice. Here are the steps:
a) Thread each fruit onto a bamboo stick. You can use the whole fruit or cut it into small pieces.

Food for Thought
Recently, community canteens (食堂) have become popular among young people.
At first, community canteens mostly served old people. As the elderly may face challenges in cooking, and many young people cannot cook, these canteens have become perfect places for the two generations to become meal friends.
For only 20 yuan, Fang Wenjing, who works in the training industry in Hangzhou, ordered a well balanced lunch at a community canteen in the city. “The dishes have a home-cooked taste, just as I expected. The canteen is also clean,” said Fang.
Community canteens meet the dining habits of young people in a number of ways. For example, the vegetarian (素食的) restaurants in Hangzhou have meals including a main dish, a bowl of rice, soup, fruit salad, and a side dish. Hu Yifan, head of a canteen, said 70 per cent of its customers are young people.
A canteen at the Zhalongkou Community in Zhejiang Province recently introduced “happiness mystery boxes”. They cost just 6 yuan but have one meat dish and a vegetarian dish. To keep what’s inside each box a surprise, stickers are placed over the see-through top to cover the “main dish”. The “mystery boxes” are often sold out very quickly.
The canteen in Beijing’s Lugu Community in Shijingshan District (区) even introduced self service meals. The buffet-style (自助式的) dishes there are priced (定价) at just 2.48 yuan per 100grams. This price is lower than that in the restaurants nearby.

Sometimes the greatest things are invented by mistake. The greatest mistake of all time could be those delicious snacks in your corner drugstore. One day, a woman was making chocolate cookies. When she ran out of chocolate powder (粉), she took out a chocolate bar (棒,条) and broke it into little pieces. She added the pieces to her cookie dough (面团) and baked (烘焙) it. She thought that the chocolate would (1) melt in the oven and make chocolate cookies. Far from melting, the pieces of chocolate stayed hard. When she took them out of the oven, she had chocolate chip cookies!Another accidental invention was made by Frank Epperson, an eleven-year-old boy. In 1905, Frank sat outside on a winter evening, mixing up a big jug (罐子) of powdered soda pop. Frank accidentally left the jug out during the night. When he went outside the next morning, he found the mixture in the jug frozen (冻僵) with the mixing stick stuck in the middle. Frank pulled out the frozen pop and tasted it. It was delicious! Frank started selling Epperson Icicles for 5 cents each. He later changed the name to (2) Popsicles. One day, you open the fridge and find some moldy (发霉的) food. But before you can throw it away, your mother stops you. She doesn’t want to waste food. She cuts off the moldy part and eats the rest. Is it safe to do this?
Mold (霉菌) can grow on almost all kinds of food. Mold is usually green, white, black or gray. Mold makes food soft and changes its color. Moldy food tastes quite bad and it’s not safe to eat.
If you find mold in soft food, just throw it away. Bread, tomatoes and hot dogs are soft food. This kind of food allows mold to easily grow below its surface.
But it’s easy to remove mold from hard food. The mold can’t grow very deeply inside this kind of food. According to the news, you should cut about 2.5 cm around and below the mold and remove it. It’s OK to cut the moldy parts out of hard food and eat the rest. But if the food is completely covered with mold, you should still throw it away.
Most kinds of mold are bad for us. But some kinds of mold can be used to make food. For example, penicillin (青霉素) can be used to make many types of cheeses, such as blue cheese. These cheeses are safe to eat and they’re quite delicious as well.

16-year-old Pat Tulloch has a different hobby. She makes cheese on the family farm in Australia. She began by making yogurt (酸奶) with her mother when she was little. Then she started watching her father’s workers make cheese. When she was ten, she made some cheese herself for the first time. “It wasn’t great at the beginning,” she says, “but the workers told me what I was doing wrong. I tried hard day and night, and I slowly got better.”
Pat always needs good milk for her cheese, but she doesn’t have to buy it. Her parents keep about 100 cows on their farm. Pat can just ask them when she needs more. Last year, Pat’s neighbour gave her a young cow to keep and look after, but it doesn’t produce (生产) milk to make cheese yet.
Pat helped her family create many kinds of cheese. This year they won a prize for one of them. “Last month we started selling cheese in New Zealand. People there read about our prize in a food magazine. Soon we’ re going to do some advertisements (广告), too.”
Pat’s next idea is to post some recipes (烹饪法) for cooking with cheese on the Internet such as having cheese with eggs for breakfast. She also thinks that people can eat cheese with pasta (意大利面). “I hope a restaurant might buy some one day,” she says. But right now Pat is still at school. “Making cheese is fun and winning a prize for it is great, but doing well in my studies is more important now.”

You can use the whole fruit or cut it into small pieces.
b) Make the syrup. Cook the sugar with water until it turns into large bubbles.
c) Carefully dip the fruit into the hot syrup, and then quickly put it into the ice water. This will help harden the syrup.

On the Spring Festival, Chinese people wish their family members and friends good health and luck for the whole year. They see the Spring Festival as a time to get together and usually celebrate it with a big family meal on the Chinese New Year’s Eve (除夕).
The Origin (由来)of the Spring Festival

So, the next time you drop your hamburger into your ice cream or your cooked potatoes into your chicken soup, don’t worry! Some of the most delicious foods in the world were invented that way!

Imagine you’re at the supermarket. You pay for some food, then throw one third of it into the trash. This may sound crazy, but millions of us are doing this around the world. According to the United Nations Food and Agriculture Organization, over 30 percent of the food worldwide goes to waste (浪费). Most of it is thrown away by shops that are unable to sell it, or by people who buy too much.
China thinks up a great idea-building “banks” for food that we can’t eat. Some people in Shanghai recently put a fridge in a community (社区), filling it with cakes and canned (罐装的) food from nearby markets and restaurants. It’s free for anyone to enjoy. Which region wastes the most food?
According to the UN, about 1.3 billion tons (吨) of food was lost or wasted in 2015. However, some 795 million people do not have enough food to lead a healthy life. Check the chart below, and find out which region wastes the most food.
Leftover rice gets a new life
Boiled rice is probably one of the most common leftovers (剩饭菜) in Chinese kitchens. Rather than throw it away, why not try the Western recipe to change last night’s leftovers into today’s lunch?
Rice pudding
What you need: cooked rice, milk, sugar or honey.
