Introduce the learning objectives of this period.
Step 2 Writing presentation and evaluation

1. Choose a few (2-3) students to read their writing to the class and give feedback.
√ Does the writer use details to support each point?
√ Does the writer use proper linking words to tie the essay together?
√ Has the writer really thought about his or her diet carefully?
√ Does the writer use vivid words to add stress to his or her points?
2. Get the students to make some revision to improve their writing.

2. Read the conversations which take place in restaurants, complete them using the correct forms of the words in brackets, and then check the answers.

Step 3 Project: Designing your own restaurant
Activity 5 Designing your own restaurant
1. Introduce the purpose of the project—working in groups to make a plan for a new restaurant in your city.
2. Work in groups. Think about what you will take into consideration if you are designing your own restaurant. And discuss the following questions.
Factors taken into consideration: location, theme, cuisine, style/feature, decoration, tables/chairs, potential customers, budget/income, service, waiters and waitresses, …
Questions to discuss:
What kind of restaurant will it be, e.g., fine dining, casual family, or fast food?
What kind of cuisine will you serve?
Who will be your customers?
How much will you charge?
Where will the restaurant be located?
…
3. Divide the following tasks within your group:
decide on the dishes to be served and the chef to be employed
design the menu in both English and Chinese
design the kitchen
design the dining area and decorations
give the restaurant a name and design advertising materials for it
work as a manager to help everyone coordinate their ideas and activities
4. Give a presentation. Now pull everything together to make a presentation to the class, where the key aspects of the restaurant will be explained by the different members of the group.

Sample:
Our restaurant is called “The Big Kahuna”. It is a casual restaurant that features traditional Hawaiian cooking and Asian fusion.
The style of our restaurant is modern, with lightly-coloured, resort style furnishings and bright, tropical accents and floral patterns.
The target customers will be young couples, families, and groups of friends enjoying casual settings overlooking the beach.
We will have indoor and outdoor tables and sofas so that customers can sit comfortably in all kinds of weather. We plan to hold events every season to enjoy luaus, barbecue parties, and weddings on the beach.
The special Hawaiian “Breakfast All Day” set features a range of Hawaiian pancakes, and the standard breakfast sets for three to five dollars. Lunches range from 5 to 12 dollars for Spam sandwiches, seafood and fruit salads, California rolls, and sushi wraps.
Dinner entrées cost from 8 to 35 dollars, depending on portion size, and include barbecued pork, chicken, as well as side dishes portioned for couples.
We’ll wear bright T-shirts, tennis whites, and sneakers. And play Hawaiian and Asian music.
