CULTURE AND CUISINE①
The French author Jean Anthelme BrillatSavarin once wrote, “Tell me what you eat, and I will tell you what you are.” Put more simply②, this means “You are what you eat.” Most people today relate this saying to③ healthy eating. However, BrillatSavarin was actually referring to④our personality, character, and culture.
Certainly, in many ways this seems to be true.Chinese cuisine is a case in point⑤.[1]Prior to⑥ coming to China, my only experience with Chinese cooking was in America, with Chinese food that had been changed to suit American tastes. For example, America's most popular Chinese dish is General Tso's chicken, which consists of⑦ fried chicken covered in a sweet sauce, flavoured with⑧ hot red peppers⑨.This is probably not an authentic Chinese recipe⑩, however, so it cannot tell us much about the Chinese. On the other hand, it does tell us a lot about Americans. It tells us, for example, that Americans love bold⑪, simple flavours. And, since the dish was also invented recently, it tells us that Americans are not afraid to try new foods.
Prior to coming to China作时间状语,句中that引导定语从句修饰先行词Chinese food。
Later, I had a chance to⑫ experience authentic Chinese food by coming to China. When my family and I had just arrived in China, we went looking for a good place to eat in Beijing.A Sichuan restaurant had been recommended to⑬ us by a friend, and finally, we found it.[2]Tired, hungry, and not knowing a word of Chinese, we had no idea⑭ how to order, so the chef⑮ just began filling our table with the best food we had ever eaten. With this, we had the pleasure of⑯ experiencing an entirely new taste: Sichuan peppercorns⑰.The food was wonderful and different, but what was even more important was the friendship that was offered to us.
not knowing a word of Chinese为现在分词作原因状语; how to order为“疑问词+不定式”结构作宾语;we had ever eaten为省略了引导词that的定语从句。
We soon moved to Shandong Province in the eastern part of North China. My favourite dish there was boiled dumplings served⑱ with vinegar⑲.I observed that family is important to the people there.[3]It has become a favourite traditional dish of the people in North China, where making dumplings has always been a family affair with everyone—from the youngest to the oldest—joining in to help. Later, I learnt that the most famous food in Shandong is pancake rolls stuffed⑳ with sliced㉑ Chinese green onions㉒.
此外,本句还包含一个with的复合结构:with everyone joining in to help (with+宾语+宾语补足语)。
Then we moved to northern Xinjiang. Some of our friends were Kazak and Inner Mongolian. These groups traditionally wandered㉓the open range on horses. As a result, their traditional foods are what you can cook over an open fire—usually boiled or roasted meat, such as lamb kebab㉔.
Our travels then took us to South China, and then on to central China. In each place we went, we experienced wonderful local dishes, from Guangdong's elegant㉕ dim sum㉖—small servings of food in bamboo steamers—to the exceptional㉗ stewed noodles in Henan.Everywhere, the food was as varied㉘ as the people. However, one thing is always true: Through food, Chinese people everywhere show friendship and kindness.
At a minimum㉙, the kinds of food local people consume㉚ tell us what they grow in their region, what kinds of lives they lead, and what they like and do not like.Could we also say, for example, that those who like bold flavours are bold themselves? Or, that those who like spicy food tend to㉛ have a hot temper? Maybe.Maybe not.[4]What we can say, however, is that culture and cuisine go hand in hand㉜, and if you do not experience one, you can never really know the other.

(2025·山东泰安期末)Whether you're happy with your size or not, the basic fact of life is that we all have to eat.How you choose to raise yourself can make a big difference in how you feel, not only in your body, but about yourself and the world around you.
“I had this babysitter who was a dieter,” said Dr Linda Shiue, an internal medicine physician and trained chef.“She would eat colourless, smellless food and she was sad all the time.” That isn't Shiue's style. She is the first director of culinary (烹饪的) medicine at Kaiser Permanente San Francisco, where she founded Thrive Kitchen, a teaching kitchen inspired by the babysitter. Her classes show people how to use spices (香料) and herbs to flavour seasonal cuisine while following an eating pattern that supports health.
“As a physician who has seen the negative effects of longterm dieting, I encourage people to reconsider their relationship to food as a source of pleasure. This can be a very arduous task considering the dietsupporting messaging that surrounds us,” Shiue said in an email.
What can you do to enjoy your food?“Many of us have experienced shame or guilt around food, and a lot of that is a product of our culture and what the fashion and whole dieting industries have created,” Shiue said.“I think that most people at some point feel like, ‘Oh, I shouldn't eat that. That's bad for me.’ Actually, there's no need to feel bad about food choices.Everything has to be in moderation, and that means there's room for the occasional indulgence (放纵).”
Restrictive (限制的) diets are having the opposite effect.“Research shows that the best eating plan is the one any given individual can stick with—a sustainable (可持续的) lifestyle change,” Shiue said.
In Shiue's opinion, food is more than a way to simply stay alive.“Nutrition is only one small part of food,” she said.“Food is also an expression of love and care.So enjoy your food!”

(2025·广东深圳期末)What's the oldest meal you've eaten? Maybe you've had leftovers from a few days ago. They probably still tasted good. But what if it wasn't a few days ago? What if you ate a 60dayold stew? Or a 49yearold beef noodle soup?
Perpetual (永久的) stew is a dish that is never taken off the heat; it's never finished. As portions are served, new ingredients are added to the pot to replace them. One day's stew becomes the basis of the following days' meals. There have been some famous examples. This year, Annie Rauwerda's 60day stew became a social media sensation. One Bangkok restaurant claims to have been cooking its beef noodle soup since the 1970s.It has been suggested that perpetual stew was a tradition in Medieval Europe, when the effort required to start a fire meant that they were left to burn all day, and a pot of stew was always boiling slowly on top of it.One New York Times article tells us about a stew in Normandy that was kept cooking for 300 years.
This tradition may date back to the Middle Ages, but thankfully, our understanding of food safety has developed since then.In a world where food is often thrown away once it reaches its useby date, many people have asked how safe perpetual stew can actually be.Experts are divided. Some maintain that as long as the stew is kept bubbling away at a temperature too high for bacteria to survive, it should be safe.Others suggest that meat can become dangerous if it's left in the stew for too long.Concerns have also been raised that some vegetables, such as potatoes, or those containing nitrates (硝酸盐), could become more poisonous the more they are reheated.
Advocates of slow cooking believe that the best food takes time, but even they may be surprised by a monthsor yearsold perpetual stew.

After he had finished his homework, he went to bed.
He ran out to play after he (had) finished his homework.

(2025·浙江温州检测)Our earliest ancestors trapped or hunted what meat they ate. When we learned to domesticate (驯化)animals, we raised them on our land, or we wandered the land with our herds. No matter which tribe we belonged to, our animals were our property. We ate their flesh in small portions, and we ate almost every bit of them, especially the poorest among us.
The Industrial Revolution changed meat.In the 19th century, refrigeration enabled meat to be trucked in from far away, or shipped from even further away, which eventually led to the destroying of forests in places like Brazil.Production then became more efficient.By the late 1940s, antibiotics (抗生素) became routine in chicken feed.By the late 1990s, genetically modified (转基因的) corn and soy brought abundant crops of animal feed.Animals were bred to be bigger and fastergrowing. In the U.S., government subsidies (补贴) helped: free groundwater, federally backed loans, price guarantees for feed crops. And meat went big.
Today the $1 trillion global meat industry is dominated by a handful of companies, including JBS, Cargill, and Tyson.Since 1961, meat production has increased four times, dwarfing the growth in the human population, which merely doubled.
Meat went from being special to being an everyday right. The more we developed, the more flesh we ate.China's meat consumption jumped sharply, from about 6.6 pounds per person in 1961 to more than 140 pounds in 2024.But the United States became the lions of Planet Carnivore (食肉动物).On average, Americans went from eating around 207 pounds of meat in 1961 to 280 pounds in 2024, and chicken came to dominate.
It wasn't just chicken consumption that changed.Follow a chicken truck to the butchery—continued forest destruction, an alarming rise in antibioticresistant bacteria, everincreasing greenhouse gas emissions—and you realize what a dark shadow we have cast over where we live.
1.How did the Industrial Revolution affect meat?
A.It caused a sharp fall in the price of meat.
B.It decreased the nutritional value of meat.
C.It restricted the use of antibiotics in meat.
D.It revolutionized meat production and distribution.
根据第二段中“The Industrial Revolution changed meat.In the 19th century, refrigeration enabled meat to be trucked in from far away, or shipped from even further away, which eventually led to the destroying of forests in places like Brazil.Production then became more efficient.By the late 1940s, antibiotics became routine in chicken feed.By the late 1990s, genetically modified corn and soy brought abundant crops of animal feed.Animals were bred to be bigger and fastergrowing.”
2.What does the underlined word “dwarfing” mean in Paragraph 3?
A.Making something seem small.
B.Greatly expanding something.
C.Matching something in number.
D.Negatively impacting something.
解析:选A。 根据画线词所在句“Since 1961, meat production has increased four times, dwarfing the growth in the human population, which merely doubled.” 故选A。
3.How does the author show the rapid increase in meat consumption?
A.By making a comparison.
B.By giving explanations.
C.By introducing a concept.
D.By making a prediction.
解析:选A。 根据第四段中“China's meat consumption jumped sharply, from about 6.6 pounds per person in 1961 to more than 140 pounds in 2024.But the United States became the lions of Planet Carnivore. On average, Americans went from eating around 207 pounds of meat in 1961 to 280 pounds in 2024, and chicken came to dominate.” 故选A。
4.What can be a suitable title for the text?
A.Antibiotics Has Transformed Chicken Feed
B.Global Companies Dominate Meat Industry
C.Our Taste for Flesh Has Exhausted the Earth
D.Meat Production Results in Forest Destruction
通读全文,结合最后一段中“Follow a chicken truck to the butchery—continued forest destruction, an alarming rise in antibioticresistant bacteria, everincreasing greenhouse gas emissions—and you realize what a dark shadow we have cast over where we live.” C选项“Our Taste for Flesh Has Exhausted the Earth(我们对肉类的喜好让地球不堪重负)”能概括文章主旨,适合做标题。故选C。

(2025·湖南长沙检测)A new report connects eating eggs to an increased risk of heart disease. The results follow several earlier studies that found eating eggs was generally healthy. The study collects data from six other earlier studies. It shows a 6 percent increased risk of heart disease when the number of eggs a person ate each day increased by half an egg.
Norrina Allen, an associate professor at Northwestern University said that, in the United States, eggs are generally one of the top sources of cholesterol (胆固醇) in a person's daily food.People with higher levels of cholesterol in their food are at increased risk of the development of heart disease later in life. However, Allen added that she would not say that eggs are completely unhealthy.“I'm not saying that people should take them completely out of their food,” she said.“I'm just suggesting that people eat them in a proper amount.”
Some experts believe the new study does not prove that eggs are causing heart disease.“Cholesterol's role in the development of heart disease has been discussed for more than 30 years,” said Dennis Bruemmer, an associate professor of medicine at the University of Pittsburgh Medical Center.“This study does have clear shortcomings, including selfreporting at a single time point,” he added.
Bruemmer said, “Eggs in moderation (适度) are probably acceptable from a nutritional standpoint.” “Moderation,” he added, “is less than one egg a day, including eggs in foods such as bread.”
Holly Andersen, a doctor at the New YorkPresbyterian/Weill Cornell Medical Center, agrees that the study has “real shortcomings”.One problem Andersen has with the study is that a lot of the eggeating people in the study also appeared to be eating much meat and processed meat.“If you're taking a lot of processed meat, it doesn't matter how many eggs you're eating,” Andersen said.
Also, Andersen said, “The study can only show there is a relation between eggs eating and heart disease. But it cannot prove eggs are the cause of the disease. It may just be that people eating a lot of eggs are also taking a lot of bacon.”
5.What does Norrina Allen agree with?
A.Eggs are completely unhealthy.
B.Eggs contain the most cholesterol.
C.Eggs should be eaten in a right amount.
D.Eggs have no connection with heart disease.
根据文章第二段中“I'm just suggesting that people eat them in a proper amount.”
6.What is Bruemmer's attitude towards the study?
A.Interested. B.Doubtful.
C.Indifferent. D.Hopeful.
根据文章第三段中“This study does have clear shortcomings, including selfreporting at a single time point,”可推知,Bruemmer对这项研究持怀疑态度。故选B。
7.What can we learn from Holly Andersen's words?
A.Eggs and meat cannot be eaten together.
B.Processed meat may cause heart disease.
C.Processed meat should be avoided.
D.The study is supported by evidence.
8.What's the best title for the text?
A.Do Eggs Cause Heart Disease?
B.Are Eggs the Top Source of Cholesterol?
C.What's the Proper Amount of Eggs Eaten?
D.Is the Cholesterol to Blame for Heart Disease?
解析:选A。 通读全文,尤其是第一段中“A new report connects eating eggs to an increased risk of heart disease.” 故选A。
Before 2022, there was barely a whisper about it.1( ) A quick TikTok search, for instance, finds that videos related to “food noise explained” attracted 1.8 billion views as of this summer.“Food noise”, which sounds negative, actually describes some of the most basic human drives: hunger, appetite, longing. But now these are being seen as problems, rather, than features.2( )
To call something noise is to go beyond describing it: It's to prove that simply loving food, letting food occupy our thoughts and responding to our hunger is questionable. But it isn't.
3( ), Food connects us to ourselves, and with each other, and there is real harm in teaching people to view the pleasure they take such fare as a problem.English food writer Nigella Lawson wrote in a post that she “couldn't bear to live without food noise.” One commenter responded in agreement—“I believe it is called ‘food music’.”
Some people who agree with the term “food noise” experience intense food thoughts, as well as engaging in harmful behaviors such as bingeing (大吃大喝) 4( ) In other words, food noise is what may happen when you're not eating enough to satisfy your appetite, often under the pressure of dietculture.
As for any of us, the joy and pleasure of food should not be discounted. We need to eat to live, of course, but it goes beyond that; to live to eat has long given many of us meaning.Food noise should not be treated as a problem.5( )
A.We should resist this definition.
B.They avoid responsible thoughts on food.
C.“Food noise” was invented by social media users.
D.Rather, we might call it “food music”, and dance to it.
E.The pleasure we take from food is an important human good.
F.But according to the experts, these problems are often rooted in restriction.
G.Now the concept of “food noise” seems to be everywhere on social media.
1.解析:选G。由上文“Before 2022, there was barely a whisper about it.”
2.解析:选A。由上文“‘Food noise’, which sounds negative, actually describes some of the most basic human drives: hunger, appetite, longing. But now these are being seen as problems, rather, than features.” 故选A。
3.解析:选E。由下文“Food connects us to ourselves, and with each other, and there is real harm in teaching people to view the pleasure they take such fare as a problem.”

HEALTHY EATING
There is much debate nowadays as to what makes up a healthy diet. For example, scientists have insisted for years that a big enemy of health is fatty food. However, there is increasing evidence that the real driver of poor health is not so much fatty food, as it is sugar.Heart disease is the number one killer of Americans.[1]And in America, people who receive 25% of their daily calories or more through sugar are twice as likely to die from heart disease than people who receive less than 10% a day (Journal of the American Medical Association, 2014). This is true regardless of how healthy the rest of their diet might be.Put more simply, while people continue to argue over whether or not fatty food is dangerous, we already know that sugar is a killer.
Much of this extra sugar comes from sweets and sweet drinks. The average American gets 1/3 of his or her sugar through sweet drinks alone.[2]The American Heart Association recommends that we limit ourselves to less than 100-150 calories a day from sugar, which is less than what is usually contained in one can of sweet drink or in a single candy bar. In other words, if you want to be healthy, you have to cut down on desserts, and cut out sweet drinks altogether.
Beyond this, you can keep healthy by consuming different categories of fresh foods, especially fruit and vegetables, which are full of vitamins and fibre, rather than processed foods.Processed foods often contain less nutrition, and have higher quantities of sugar, salt, and fat than fresh ingredients.[3]Besides this, it is also important to have some meat, beans, or dairy products in your diet, as they provide the necessary protein for strong bones and muscle growth. As with everything in life, moderation is key.The ideal diet is a balanced one, without too much or too little of any one thing.
Finally, a fundamental key to healthy eating is to eat slowly. It takes about twenty minutes from the time you start eating for your brain to tell your body that you are full.[4]What this means is that people who chew too quickly end up eating too much food because they still feel hungry. Eating slowly also allows your body to digest your food better, and will allow you to enjoy your food more.In addition, studies show that consistent eating habits, for example, taking three meals a day at the same time each day, are better for our health. It is also better to eat a modest amount of food each time, rather than to eat a lot in one meal, and then a little in the next.
There is no one trick to healthy eating.Rather, healthy eating starts with having a healthy attitude towards food. One question you can ask yourself is, “Do I eat to live, or live to eat?” If you are using food mostly for nutrition, then you are on the right track with your diet. However, if food has become the centre of your life, you might be on the road to bad health. It is up to you to decide how you want to live, and to make the right decisions about your diet.

(2025·广东广州期末)A mould (霉菌) that grows on food waste has been shown to completely change its taste, allowing food that would otherwise be thrown out to be eaten in a new way.
Every year, about a third of food globally is wasted, with leftover responsible for around 8 per cent of greenhouse gas emissions (排放) over its lifetime.Repurposing it into new kinds of eatable food can reduce the climate impact of food production while also improving food security.
Neurospora intermedia, an orange fungus (真菌) grown from the byproducts of milk production, has been used for centuries to make oncom, a traditional food in Indonesia.Vayu HillMaini at the University of California, and his colleagues are now working with chefs at Michelinstarred restaurants to develop new foods using the fungus.
His team has shown that N.intermedia can grow well on at least 30 types of agricultural waste, including tomato and banana skin, where the fungus can transform indigestible plant waste into nutritious food in around 36 hours. Some of the research results are now appearing on their menus at the Alchemist restaurant in Copenhagen run by Rasmus Munk.N.intermedia is used in a dessert of jellied plum wine with rice custard, which is left to ferment (发酵) for 60 hours. This process has changed both the smell and taste “in quite a dramatic way”, according to Munk.
When the team asked Danish consumers to try it for the first time, people consistently rated its taste above 6 on a scale of l to 9.
“I found it mindblowing to suddenly discover flavours like banana without adding anything except the fungi, ” says HillMaini.“Of course, all of our wild shots don't work out, but when they do, they can produce quite revolutionary results.”
The chefs involved hope that by demonstrating what upcycled food can do at the highest level of gastronomy (美食学) , the concept will gain commercial appeal.“We are just at the beginning stages of unlocking its full potential,” says HillMaini.

A.It significantly changes the flavor of food.
B.It is primarily used to make jellied plum wine.
C.It has been used to make traditional food for long.
D.It can transform indigestible food within 60 hours.
解析:选A。 根据第一段“A mould that grows on food waste has been shown to completely change its taste, allowing food that would otherwise be thrown out to be eaten in a new way.”以及第五段“When the team asked Danish consumers to try it for the first time, people consistently rated its taste above 6 on a scale of 1 to 9.” 故选A。
2.What does the underlined word “mindblowing” in Paragraph 6 mean?
A.Annoying. B.Puzzling.
C.Surprising. D.Satisfying.
根据第六段中“‘I found it mindblowing to suddenly discover flavours like banana without adding anything except the fungi,’ says HillMaini.”
3.What is the best title of the text?
A.A New Trend in Food Industry
B.A Fungus Creates Wonder
C.A Mould Grows on Food Waste
D.The Danger of Food Waste
根据第一段“A mould that grows on food waste has been shown to completely change its taste, allowing food that would otherwise be thrown out to be eaten in a new way.”以及最后一段“The chefs involved hope that by demonstrating what upcycled food can do at the highest level of gastronomy, the concept will gain commercial appeal.‘We are just at the beginning stages of unlocking its full potential,’ says HillMaini.”

(2025·河南郑州期末)Labgrown chicken is finally making its way onto menus in the United States. The US Department of Agriculture (USDA) has recently given permission for selling cultured (培养的) meat produced by GOOD Meat and UPSIDE Foods, marking a significant breakthrough for the cultured meat industry. These companies are able to grow small amounts of chicken cells into meat without the need for traditional slaughter (屠宰).However, it's important to note that this permission is currently limited to chicken products. Both companies still require additional permission to market cellcultured beef, pork or seafood.
Concerns have been growing among Americans about traditional meat production, which contributes to about 14.5% of global carbon emissions and can encourage antibioticresistant (耐抗生素的) bacteria growth.Additionally, it pollutes waterways with animal waste. And the animals themselves often live relatively short lives in cages.“The current methods of traditional meat production are at the root of many environmental issues,” says GOOD Meat CEO Josh Tetrick.
Despite these concerns, meat remains a significant part of many people's diets due to cultural, traditional and nutritional reasons.Cultured meat companies position themselves as producing sustainable and proper meat, aiming to provide meat lovers with a guiltfree choice that satisfies their desire for tasty food.
The production process for labgrown meat is relatively straightforward, with the main challenge lying in building sufficient production facilities. Both companies, now armed with USDA and FDA permission, can focus on expanding to produce enough cellcultured meat to meet the demand. At the beginning, labgrown chicken will only be available at select restaurants, including Bar Crenn in San Francisco and a restaurant owned by chef José Andrés in Washington.
