In 2002, scientists dug in the ruins of an old Chinese city. They saw an upside-down clay bowl. When they picked it up, a 4,000-year-old noodle was in it! This very old food was still in good condition(状况). 1 Sadly, when people took it, the ancient noodle soon broke. But scientists found it was made from millet(小米).
Businessmen first brought wheat(小麦) to China around the time this ancient noodle was made. 2 They grew wheat to get wheat dough(面团). They liked the feel of wheat dough. They made a new word, “mian”, for things made from wheat.
3 To make lamian (hand-pulled noodles), a cook starts with a dough ball. Pull it out, bring the ends together, and pull again, over and over. Today, a skillful cook can turn a dough ball into three-meter-long noodles in just minutes.
4 This was an old way to make noodles, but this kind of noodle is still popular in China.
Noodles are important main food both in ancient and modern times. However, noodles have also found other ways onto our tables. 5
