Like many PhD. students, I have numerous sources of stress. I tried to lower levels of the stress hormone by following the conventional wisdom: get some exercise, get enough sleep, maintain a healthy work-life balance. But following this prescription only works during the least stressful times.
I’m a lifelong novelty seeker. What I enjoyed included hitchhiking across the state and going for a bungee jumping. This penchant served me well in my second year of graduate school. As the pressure to pass my qualifying exam was mounting, I needed some kind of release. So, I invited one of my fellow graduate students to come swimming with me — in a river, in the middle of winter.
The moment I plunged into the freezing water, I immediately felt a surge of energy and fear. Quickly coming back the surface, I gulped cold air and slowly got into amore focused state. I stayed in the water as long as I could, my skin burning from the cold. My friend and I agreed it was a real rush and that we would come back the next weekend.
And so it became our weekly routine. Although the energizing rush of adrenaline (肾上腺素) was the initial pleasure, I found the plunge had other unexpected benefits, too. Stimulating my sympathetic nervous system in the short term had a comforting effect in the long term. I noticed I was approaching my work with a calmer state of mind and taking the failures easier.
The seasons changed and the water was no longer cold, but the stresses of graduate school remained. I began to explore other types of activities that would have the same effects I had felt from the cold winter swims. Among my adrenaline-inducing activities now are mountain biking, rock climbing, or listening to metal music on my walk to work. If it is really necessary, merely taking a cold shower can do the trick. Long after I return to the lab, my focused, energetic mindset persists.
Regular adrenaline-inducing activities can be an invaluable tool. After long hours of lab work, it is hard to motivate myself to sit down to write my thesis. So before I get started, I should probably take a cold shower for my healthy dose of adrenaline.

Fresh fish should have a mild smell. Strong fishy smells are the first signs to go bad. How do the fishy smells come from?
It can be several days from when the fish are caught to when they reach the supermarket. In that time, bacteria that grow naturally in fish start to consume a substance called trimethylamine N-oxide(TMAO)in fish. These bacteria change TMAO into trimethylamine (TMA), the substance responsible for the fishy smells. Bacteria in fish can also change lysine(赖氨酸)into cadaverine(尸胺), a substance that’s associated with breaking down the fish once they are caught and giving off fishy smell.

Controlling fat oxidation can function as well, especially for fattier fish species. While freezing slows bacterial growth, it does not stop fat oxidation. Like many PhD. students, I have numerous sources of stress. I tried to lower levels of the stress hormone by following the conventional wisdom: get some exercise, get enough sleep, maintain a healthy work-life balance. But following this prescription only works during the least stressful times.
I’m a lifelong novelty seeker. What I enjoyed included hitchhiking across the state and going for a bungee jumping. This penchant served me well in my second year of graduate school. With the growing trend of listening to stories on meditation apps(冥想应用), travel tales—sometimes featuring surrounding sounds of places such as rainforests in Borneo—are helping people get restful sleep. Imagine a voice softly telling as listeners close their eyes and snuggle down in their beds. Are you paying attention? Actually, it doesn’t matter.
According to the CDC, some 70 million Americans struggle with chronic sleep problems. To help with this, many adults are bringing back bedtime stories through meditation apps. Nearly a third of the Calm app’s 300 bedtime stories, which have been listened to more than 450 million times, are about travel. Some 45% of the bedtime stories on the app Breethe are travel-related. Earlier this year, half of the top 10 bedtime stories were travel-themed.
Travel bedtime stories are typically an audio retelling of a trip and rely heavily on descriptions, with occasional surrounding noises like ocean waves, train tracks, or soft music. Train stories are particularly popular at bedtime. “You need movement in a bedtime story—if things are static(静止的), it’s too dull and the listener will get restless,” says Martha Bayless, a professor at the University of Oregon’s Folklore and Public Culture Program. “But the movement has to be non-threatening and soothing. The train is the perfect vehicle for sleep, engaging the senses in a gentle way.”
One possible reason why travel bedtime stories calm our brains is “mirror neurons(镜像神经元),” says Rachel Salas, a neurologist at Johns Hopkins Center for Sleep and Wellness. “These brain cells might combine our own experiences with someone else’s. Fresh fish should have a mild smell. Strong fishy smells are the first signs to go bad. How do the fishy smells come from?
It can be several days from when the fish are caught to when they reach the supermarket. In that time, bacteria that grow naturally in fish start to consume a substance called trimethylamine N-oxide(TMAO)in fish. These bacteria change TMAO into trimethylamine (TMA), the substance responsible for the fishy smells. Bacteria in fish can also change lysine(赖氨酸)into cadaverine(尸胺), a substance that’s associated with breaking down the fish once they are caught and giving off fishy smell.
Chemical reactions can also lead to fishy smells. This happens through the oxidation(氧化)of fat. Fish are an important source of omega-3 fatty acids. When these fats are exposed to oxygen, they oxidize and break down into the substance that you can smell.
To slow down the fishy smell, what is beyond question is that the less time between when the fish are caught and when they reach the kitchen, the better. But today, fish are often flown across the globe. To keep smell-producing bacteria at bay, the fish must be frozen or kept at the low temperature possible as soon as they are caught and cleaned.
Controlling fat oxidation can function as well, especially for fattier fish species. While freezing slows bacterial growth, it does not stop fat oxidation. This reaction will occur as long as oxygen is present. Fatty fish are usually not frozen because, despite the cold temperature, they’re going to oxidize pretty fast unless they are stored in a low oxygen container. That’s why those species are often canned.
It’s also important to remember that smell is not always an indicator of safety, especially in processed fish products. “What you might consider the fishy smell may be a delicacy in another culture,” said Carl A. Batt, a professor of food science at Cornell University.
