Have you ever been burned by a pie from KFC or McDonald’s? Many people on social media say that when the pie crust (外壳) feels cool enough to eat, the filling inside is still “as hot as lava (岩浆)”.
To find out how hot the filling can be, a team in China did a test. They found that the average temperature of the filling can reach 64℃ when the pies are taken out of the oven. According to China Science Communication, they suggest temperature for food is around 10℃ to 40℃, and food that is over 60℃ can hurt our throat.
The reason for this is that the filling is thick and not exposed (暴露) to air. Once heated, it keeps heat for a long time. The test shows that after a pie from KFC has been out of the oven for 10 minutes, the temperature inside still reaches 45.1℃.
The temperature difference can be explained using a physics concept (概念) called specific heat capacity (比热容). This tells us how much heat is needed to change the temperature of 1 gram of something by 1℃. Something with a low specific heat capacity is like a small cup; it doesn’t hold much heat and cools down fast. Things with a high specific heat capacity take longer to cool down. Usually, liquids (液体) hold heat longer than solids (固体). As a pie’s filling has more water than its crust, it takes more time for the filling to fully cool down.

Have you ever been burned by a pie from KFC or McDonald’s? Many people on social media say that when the pie crust (外壳) feels cool enough to eat, the filling inside is still “as hot as lava (岩浆)”.
To find out how hot the filling can be, a team in China did a test. They found that the average temperature of the filling can reach 64℃ when the pies are taken out of the oven. According to China Science Communication, they suggest temperature for food is around 10℃ to 40℃, and food that is over 60℃ can hurt our throat.
