However, this new study explores deeper, examining how carbon dioxide (CO2)—the gas responsible for the bubbles—affects our blood cells. When we drink sparkling water, CO2 is taken into the bloodstream through the stomach wall. There, it meets with red blood cells, which contain an enzyme (酶). This enzyme turns CO2 into bicarbonate, giving rise to a chain reaction that may enhance the body’s ability to process sugar. The researchers made this discovery through their observation of kidney dialysis (肾透析) treatments. During dialysis, as blood passes through a special machine, sugar levels drop, even though the surrounding blood has more sugar in it. This suggests that something about this process helps the body use sugar better. However, before you start replacing all your regular water with the sparkling variety, it’s important to understand the extent of these effects. During a four-hour dialysis treatment, processing nearly 50 liters of blood only results in using up about 9.5 grams of sugar, the amount in a single tablespoon. The amount of CO2 in a glass of sparkling water would have an even smaller effect. What’s more, not everyone should rush to buy sparkling water. Some people might experience discomfort, particularly if they have easily upset stomachs. As with most things in nutrition, a proper amount is key.
