① “Practice makes perfect” is a very popular expression. But can we take this saying literally?
②One popular view is that if a person practises for at least 10, 000 hours, he will reach “perfection”, or in other words, become an expert in a field. It was given by Malcolm Gladwell in his best-selling book, Outliers: The Story of Success. He gave the examples of the music group The Beatles and Microsoft co-creator Bill Gates, who clearly put in over 10, 000 hours of practice before they became successful.
③However, Gladwell’s book has been said by many to be too simplistic and generalizing (概括). Anders Ericsson argued that 10, 000 hours was just an average figure. Some people may need fewer than 10, 000 hours and others may need more. He also said that practising a lot was not enough, the type and quality of practice also made a difference. Most importantly, he mentioned the importance of “deliberate (刻意) practice”. When a person practises a specific part of a skill in depth rather than as a whole, it’ll be much more effective, though it’s tiring.
④ Many other studies argue that practice alone is far from enough. In fact, a more recent study from Princeton University stated that practice only accounted for up to 26% of reaching an expert level. Like many ABCs (American-born Chinese) and young Chinese immigrants (移民), sisters Sarah and Kaitlin Leung took great interest in Chinese food after they’d grown up, but found it really hard to learn how to prepare it. There was such a “gap”, as Sarah puts it, compared with western recipes (菜谱) presented on TVs or Blogs.
As it turns out, though, the Leungs have right positions to do something about this. Bill, the father, had spent years cooking beef at his family’s Chinese American restaurant. Judy, the mom, was born and raised in Shanghai and had deep knowledge about traditional Shanghainese cooking. Meanwhile, the two sisters had grown up in the New Jersey country, eating their parents’ food, but also growing in American food culture.
So, in 2013, the Leungs started a blog called The Woks of Life. Different from other food blogs, it’s intergenerational heritage (代际传承) cooking culture—The four family members took turns posting recipes, each sharing their own favorites with their area of expert knowledge.
Kaitlin says that The Woks of Life follows along line of pioneers—like Joyce Chen, Martin Yan and Ming Tsai, who first started to bring Chinese home cooking into the US and got more attention. “We feel excited we’ve made a meaningful mask over these years, explaining that there is a huge need for these recipes in the US,” she says, “it’s about the gap, yes, but there’s also a huge need. Asian Americans look to reconnect with the food of their heritage.”
“Five years ago, you wouldn’t have been able to find a ton of Chinese recipes in the New York Times,” Kaitlin says, “now you can find them from blogs like The Woks of Life.”

①Have you thanked your toilet today? Maybe take a moment to thank this useful invention. Unfortunately, many people around the world do not have good toilets. World Toilet Day started in 2001 to draw attention to the problem. Since then, inventors around the world have been hard at work on designs for better toilets. The goal is clean toilets for all.
②Why do so many people live without good toilets? One problem is water shortage. Traditional toilets use water to flush (冲) the waste away. But lots of places don’t have enough water. And if there’s no sewer system (下水道) or water treatment plant, the flushes might go into rivers or onto fields. For almost half of the world’s population, flush toilets are just not practical. As a result, there are always different kinds of toilets that do not need to be flushed.
③Composting toilets might be a good choice. They do not need water, so they’re good for areas that are dry or don’t have sewer systems.
④Haiti’s EkoLakay toilets look like a normal toilet. When you use one, wastes fall into different containers. Some plant parts, like peanut shells or shredded sugar cane stalks are added instead of flush water. This stops smells efficiently.
⑤A pit toilet is the oldest and most basic toilet, which is just a hole in the ground, maybe with an out-house over it. This is simple, but not very clean. Germs (细菌) can escape into the air and get into water. But replacing the pit with a septic tank (化粪池) is a big improvement. Septic pits are lined with plastic or clay, to stop germs.
⑥Tiger toilets get help from an unexpected partner — a kind of worms (蠕虫) on the earth known as tiger worms. These worms love to eat the wastes. Under a tiger toilet is a box with a screen in the middle. Solid (固体) waste stays in the top of the box, where the worms live. Liquid (液体) flows through small holes into sewer systems. Tiger toilets are simple to build. They are recently being tested in India and are proving quite popular.
⑦Educational ways have also played an important role in changing public attitudes towards good toilets. Schools and community programs are teaching people about the importance of them, encouraging behavior changes.
⑧The road to achieving world-wide good toilets is still long. On this World Toilet Day, let us continue to thank the convenience of the wonderful invention. By doing research on more efficient toilet technologies and raising senses of keeping clean surroundings, we can work towards a future where every person has a clean and safe toilet.

During the Yuan and Ming dynasties blue-white porcelain became increasingly popular, and since the 14th century manufacturers have shipped blue-white porcelain to world markets. The porcelain reached its peak in the Qing Dynasty. Its thin, translucent quality and attractive designs made it very valuable throughout Europe and the colonies, ranking first among blue-white porcelain nationwide.
Blue-white porcelain is the most famous among the four traditional types of porcelain produced in Jingdezhen, and is famous as the “ever-lasting blue flower.” The blue-white style is created by drawing the design with cobalt pigment onto the stoneware body and painting over it with a transparent glaze. This style is also known as “underglazed blue.” The piece is then fired at a high temperature. Blue-white porcelain has been in production ever since thanks to its bright colors, simple yet elegant patterns, and smooth glaze that never fades.
The Yuan Dynasty was a key period for the development of firing techniques for blue-white porcelain in China. Its unique characteristics were based on the techniques of former dynasties.
