Our planet faces severe environmental threats, mainly due to human activities such as large farming and burning fossil fuels, which lead to climate change and natural disasters.
One of the most destructive activities we are carrying out is cutting down forests – deforestation. This is done for many reasons, such as providing wood for fuel, making land available for housing or for creating space for more farm animals. This has been most noticeable in Brazil, which is home to the world’s largest rainforest. Deforestation there has hit its highest rate in a decade, according to official data. Over the course of a year, an area about five times the size of London has been destroyed.
Although deforestation rates in the Amazon and other tropical(热带的) regions have declined, the scale remains vast. In 2018, Global Forest Watch reported that 30 football fields’ worth of forest were cut down every minute. Frances Seymour from the World Resources Institute warns that the overall trend is still upward, indicating we are far from winning the battle against deforestation. Brazil has taken policies to reduce deforestation, including fines for illegal land use and logging(采伐). A designer, Cho turned to baking a few years ago when she couldn’t find satisfaction at work, finally starting her blog, Eat Cho Food. Her grandparents moved to Cleveland from China in the late 1960s, and some of Cho’s favorite childhood memories include trips to Chinese bakeries around the US. “I rarely saw recipes for my Chinese bakery favorites in books or on the Internet. I felt that there was a void in baking cookbooks when it came to the baked goods I enjoyed in my childhood,” Cho tells CNN Travel.
Cho’s book not only focuses mainly on Cantonese-style baked goods but also covers recipes from other regions. “I also wanted to show that there is so much diversity and cultural influences in Chinese baking,” says the author.
The mooncake a symbol of the Mid-Autumn Festival, is the other classic treat featured in Cho’s book title. It serves as a great example of how Chinese baked goods have accepted different cultures.

Our planet faces severe environmental threats, mainly due to human activities such as large farming and burning fossil fuels, which lead to climate change and natural disasters.
One of the most destructive activities we are carrying out is cutting down forests – deforestation. This is done for many reasons, such as providing wood for fuel, making land available for housing or for creating space for more farm animals. This has been most noticeable in Brazil, which is home to the world’s largest rainforest. Deforestation there has hit its highest rate in a decade, according to official data. Over the course of a year, an area about five times the size of London has been destroyed.
Although deforestation rates in the Amazon and other tropical(热带的) regions have declined, the scale remains vast. In 2018, Global Forest Watch reported that 30 football fields’ worth of forest were cut down every minute. Frances Seymour from the World Resources Institute warns that the overall trend is still upward, indicating we are far from winning the battle against deforestation. Primary forests like the Amazon are crucial for biodiversity, housing rare species and acting as carbon dioxide stores. The loss of 3.6 million hectares in 2018 is alarming.
Brazil has taken policies to reduce deforestation, including fines for illegal land use and logging(采伐). International actions against soy and beef trade from deforested Amazon areas have also helped. However, other regions like Ghana and the Democratic Republic of Congo are witnessing increases in deforestation. It appears that only political will and human conscience(良知) can effectively solve this problem and protect our planet.

In an age when Chinese food is no longer foreign to international audiences, there’s one culinary (烹饪的) area that has yet to receive much attention globally — baking. Kristina Cho’s recent Mooncakes and Milk Bread: Sweet & Savory Recipes Inspired by Chinese Bakeries aims to change this by offering a rare collection of recipes inspired by Chinese American bakeries and cafés.
A designer, Cho turned to baking a few years ago when she couldn’t find satisfaction at work, finally starting her blog, Eat Cho Food. Her grandparents moved to Cleveland from China in the late 1960s, and some of Cho’s favorite childhood memories include trips to Chinese bakeries around the US. “I rarely saw recipes for my Chinese bakery favorites in books or on the Internet. I felt that there was a void in baking cookbooks when it came to the baked goods I enjoyed in my childhood,” Cho tells CNN Travel.
Cho’s book not only focuses mainly on Cantonese-style baked goods but also covers recipes from other regions. “I also wanted to show that there is so much diversity and cultural influences in Chinese baking,” says the author.
The mooncake, a symbol of the Mid-Autumn Festival, is the other classic treat featured in Cho’s book title. It serves as a great example of how Chinese baked goods have accepted different cultures.
“A lot of people see the Cantonese style of mooncake as the ideal mooncake, but that’s not necessarily true. Every region in China has its style.” explains Cho. These days, mooncakes are stuffed with everything from ice cream to custard, with some chefs even offering Mooncake Wellington, complete with beef. For Cho, a mooncake shouldn’t be defined by its shape and form, but by the way it is eaten.
