Cherries are one of China’s favorite fruits. This winter, you can see them in almost every fruit shop. Most of these dark red, juicy fruits come from Chile by ship. The trip takes about 30 days. Have you ever wondered how they stay fresh for so long?
The secret is a technology called Controlled Atmosphere (CA). Fruits and vegetables still “breathe” after they are picked. In a normal place, they react with the air, which makes them go bad faster. Microorganisms (微生物) in the air also make them spoil (变质) more quickly.
But CA technology creates a safer place for fruits and vegetables. It reduces the oxygen (O2) level in the storage (存储) area. This slows down the fruits’ activities. At the same time, it adds more carbon dioxide (CO2), and sometimes a little nitrogen (N2). The temperature and humidity (湿度) are also changed to “put the fruits to sleep”. But how did this technology develop over time?
The idea of CA technology is not new. It started in the 1800s. In the 1920s, Franklin Kidd and Cyril West from Cambridge University studied how fruits breathe. This led to the first apple storage using “gas storage” in 1929. Later, Robert Smock from Cornell University made the technology better. He wanted to make local apples last longer, and his work helped McIntosh apples stay fresh until spring.
Today, CA technology is used in many ways. It helps keep products fresh in cold storage places, food packaging, and even the flower industry. It makes sure that fruits; food, and flowers stay fresh for a long time, even after traveling far.
