Xiao long bao (soup dumplings), those amazing constructions of delicate dumpling wrappers, encasing(包裹) hot, 56 (taste) soup and sweet, fresh meat, are far and away my favorite Chinese street food.

To make Jiaozi, you first need to roll out of the dough until it's smooth and let it rest. Then roll the dough into long strips(条) and cut it into small pieces. Next, roll each piece into a round wrapper. When it comes to filling, mix the ingredients like minced meat,vegetables, adding seasonings to enhance the taste. Place a spoonful of filling(一勺饺子馅)in the center of the wrapper, fold it in half, and seal the edges(密封). Finally, they can be boiled in a pot of boiling water until they float to the surface, or pan - fried until the bottoms turn a beautiful golden - brown.
