TOFU
Tofu or bean curd is made by curdling (使凝结的) fresh soya milk, pressing it into a solid block and then cooling it. Tofu was accidentally invented in China 2, 000 years ago, when a cook added seaweed to soya milk, which made it curdle. This is the same process that is used for making cheese. Like cheese, tofu is a great example of how really messing up(搞砸) a recipe can create something unexpectedly good.

Do you know what you’d like to be when you grow up? It takes most people many years to find out. For the young artist Alexandra Nechita, it never really seemed to be a question. From the day she began drawing at the age of two, she was an artist. Alexandra Nechita was born in Romania in 1985 and moved to California when she was still a baby. As a little child, she loved colouring in her colouring books. Her parents hoped she could spend more time playing with other children, so they took away her colouring books. Alexandra began drawing her own pictures and colouring them in.
By the time Alexandra was seven years old, she had begun painting with oil paints. When Alexandra took a local art class, her teacher was amazed at the young artist’s unusual style of painting. Alexandra’s work was similar in some ways to the paintings by famous artists like Picasso. These artists did not use a realistic style of painting. They allowed their imaginations to play an important part in their work. The interesting thing was that little Alexandra had never seen the work of these artists. People called her “Little Picasso”. This was a great honour, but Alexandra’s style of painting was all her own.
Alexandra’s first public show was held at a Los Angeles public library when she was only eight years old. People were amazed at how young Alexandra was, but mostly they loved her imaginative artwork. It did not take long for Alexandra and her work to become famous. She appeared on television programmes and in newspapers and magazines all over the world. The sale of a single piece can earn the young artist thousands of dollars. But that is not why Alexandra creates artwork. She just cannot imagine doing anything else that would bring her such joy and satisfaction.
Today, Alexandra is a full-time artist. She also works to help support the arts in schools. Alexandra is a strong believer in the power of art as a tool of communication and a bridge to building peace throughout the world.

One man’s trash is another man’s treasure. It is absolutely the case in Turkey where garbage collectors started collecting books that have been thrown away and ended up opening a library.
It started when garbage man Durson Ipek found a bag of abandoned books when he was working and then it snowballed from there. Ipek and other garbage men started gathering the books they found on the streets that were ready for landfills (垃圾填埋地) and as their collection started to grow, so did word of mouth. Soon, local residents started donating books directly. The library was initially available only to the garbage employees and their families to use but as the collection grew, so did public interest and the library was opened to the public in 2017.
“On the one hand, there were those who were leaving these books on the streets. On the other hand, others were looking for these books,” Ankaya mayor Alper Tasdelen told CNN. “We started to discuss the idea of creating a library from these books. When everyone supported it, this project happened.”
All the books that are found are sorted and checked for condition. If they pass, they go on the shelves. Today, the library has over 6,000 books that range from fiction to nonfiction and there’s a very popular children’s section that even has a collection of comic books. An entire section is devoted to scientific research and there are also books available in English and French. The collection has grown so large that the library loans books to schools and educational programs.
“Village school teachers from all over Turkey are requesting books,” Tasdelen told CNN. The government has to hire a full-time employee to manage the library.
This library is incredibly popular. It is frequently filled with the children of the city’s workers and students from nearby schools. There is a waiting room set up for readers and chess boards for the people who visit the library. You can even enjoy a cup of tea in the waiting room.

The Earth’s population is expected to reach 9.7 billion by 2050. Experts estimate food production will have to increase by 70 percent to keep pace with that growth. Previous methods of agriculture will soon no longer be an option. According to a 2018 study, we have to turn away from meat and dairy products.
U.S. customers have proved themselves willing to test the waters. Americans spent $1.4 billion on plant-based meat in 2021, representing a market share of 2.7 percent of all meat sales. The plant-based food companies claim their burgers use less land and water and produce less greenhouse gases. But, consider the possibility that we left our most promising resource behind in the ocean. Will you swap meat for seaweed?
“I think seaweed needs branding(品牌),” says Mark Kulsdom, co-founder of the memorably-named Dutch Weed Burger. As Kulsdom explained Dutch Weed Burgers are vegetarian but for meat eaters. A decade after launching their first product, he and his partners now sell about quarter of a million burgers each year.
Ultimately, Kulsdom is striving for a culture change. “I believe we need to raise interest sometimes by using a bit of an unorthodox (非正统的) approach to things,” he adds. “When people get what they already know, it’s not that interesting. When their curiosity is awakened, that’s when new things and ideas can enter their minds.”
In 2008, researchers discovered 14,000-year-old seaweed fragments (碎片) in southern Chile that had been pressed into cakes and clearly been cooked. As they wrote in Science, all seaweed recovered at the site are excellent sources of iodine, iron, zinc, protein, hormones and a wide range of elements. Though Mark Kulsdom’s Dutch Weed Burger sounds futuristic, one could argue that they’re revisiting one of the oldest stories we know.

Tofu or bean curd is made by curdling (使凝结的) fresh soya milk, pressing it into a solid block and then cooling it. One man’s trash is another man’s treasure. It is absolutely the case in Turkey where garbage collectors started collecting books that have been thrown away and ended up opening a library.
It started when garbage man Durson Ipek found a bag of abandoned books when he was working and then it snowballed from there. Ipek and other garbage men started gathering the books they found on the streets that were ready for landfills (垃圾填埋地) and as their collection started to grow, so did word of mouth. Soon, local residents started donating books directly. The library was initially available only to the garbage employees and their families to use but as the collection grew, so did public interest and the library was opened to the public in 2017.
“On the one hand, there were those who were leaving these books on the streets. On the other hand, others were looking for these books,” Ankaya mayor Alper Tasdelen told CNN. “We started to discuss the idea of creating a library from these books. When everyone supported it, this project happened.”
All the books that are found are sorted and checked for condition. If they pass, they go on the shelves. Today, the library has over 6,000 books that range from fiction to nonfiction and there’s a very popular children’s section that even has a collection of comic books. An entire section is devoted to scientific research and there are also books available in English and French. The collection has grown so large that the library loans books to schools and educational programs.
“Village school teachers from all over Turkey are requesting books,” Tasdelen told CNN. The government has to hire a full-time employee to manage the library.
