A growing body of scientific research is finding that fermented foods benefit health. When researchers at Stanford put people on a diet rich in a variety of fermented foods, they found their microbiomes (微生物组) became more diverse and that some signs of harmful reactions in the body decreased. Maria Marco, a professor at the University of California, found in the lab that sauerkraut contains more compounds that protect the lining of the gut (肠道) than raw cabbage does. This could help explain why fermented vegetables may help reduce such harmful reactions. The fermentation process can also change the nutritional content of food by, for example, increasing the amount of some vitamins. Nutrition scientists say it can make nutrients easier for the body to absorb as well. Growing concern in gut health and desire for less-processed products are driving consumers’ interest, said Stephanie Mattucci, principal strategist at market research firm Mintel. More companies are embracing fermentation, in which beneficial microbes are used to change food and drinks. To deal with the strong flavor of many fermented foods, some companies are even creating milder versions to win over more people. According to NielsenIQ, sales of fermented foods and ingredients reached $61.17 billion in the 52 weeks ending Oct. 4, up about 27% from the comparable period four years ago. “But there’s still a lot that scientists need to learn about fermented foods,” said Dalia Perelman, a nutrition researcher and registered dietitian at Stanford. “We’re trying to figure out if some are better for you than others, if there is a best type of fermentation and what exactly it is about these foods that makes people healthy.” 28. A trial involving thousands of flights between the US and Europe has found that planes produce fewer contrails if they follow flight paths recommended by an AI system to reduce their impact on global warming. Dinesh Sanekommu at Google and his colleagues used an AI contrail-forecasting tool to give routing advice in a randomized controlled trial of more than 2400 real American Airlines flights. The trial involved flights heading eastward from the US to Europe and ran from January to May 2025. The direction was only one-way because these flights could take place at night, which is when contrails have a clearer warming effect. During the day, contrails can have a cooling effect because they reflect sunlight into space. The flight routes between two cities were randomly assigned to two groups. For the first group, air traffic dispatchers (调度员) had an option in their flight-planning software to pick an AI-optimized (优化的), low-contrail route, but for the second, no alternative was suggested. Actually, in the first group, only 112 out of 1232 flights took the alternative paths because of operational concerns, such as cost or safety. According to an AI analysis of satellite imagery of flight paths in the first group, there was a 62% lower amount of contrails for flights that took the contrail-optimized routes. When all flights in this group were included, the overall reduction in contrail formation was 11.6%, compared with the second group. The team estimated that the flights’ warming effect was reduced by 13.7% in the entire group given a suggested route and 69.3% in the flights that took the optimized routes. “The 62% reduction is unlikely to have happened by chance,” says Edward Gryspeerdt at Imperial College London, “You can’t just scale this up to be a 60% reduction in contrails from every flight everywhere, but even a 10% reduction is still a non-negligible effect.” 32.
