Using a microscope, they measured the width of the blade tips, ranging from 5 to 200 millimetres. Then they started cutting the onions at speeds between 0.4 and 2 metres per second. Their recordings clearly showed that sharper blades produced fewer drops with less energy. The duller (钝的) the blade, the easier it was to bend (使弯曲) the onion’s skin before cutting. This bending stored energy, building up pressure inside the vegetable until it cut open — resulting in more juice. In some cases, the drops could break into smaller aerosol particles (气溶胶颗粒), reaching speeds of about 43 metres per second. As these particles flew through the air, they created a fine spray that was more likely to make our eyes tear. Meanwhile, faster cutting speeds produced four times as many particles as slower rates. Although this research is still waiting for expert review, it offers a useful tip: Using a sharp knife and cutting the onion slowly can continuously reduce the unwanted effects. So, the next time you’re in the kitchen preparing onions, remember to use a sharp knife and take your time.
