Did you notice the water temperature when you boiled an egg? Boiling a perfect egg is not easy. The egg white and yolk (蛋黄) need to be cooked at different temperatures to taste good. Recently, scientists found a great way to boil perfect eggs.
The method is called “periodic cooking (循环烹煮法)”. It works by moving an egg between hot water and lukewarm water (温水). The egg stays in each kind of water for two minutes, and this cycle repeats eight times. In this way, the temperature can be just right for both the egg white and the yolk.
To create this method, scientists first studied how heat moves through an egg. They decided how much time an egg should stay in each kind of water. Then they compared it with three other traditional ways, using 40 eggs for each method. The results showed that this new method could keep the yolk at a fixed 67℃, while the egg white was cooked to 55℃ or 100℃ in different water. This made eggs with perfect taste and texture (口感). It also helped keep more nutrients (营养物质) in the eggs.
Micah Siva, a nutrition expert (营养专家) and chef, said, “This method works well because cooking is scientific. It protects the proteins (蛋白质) in the egg and makes it better.” The best part is that you can try this method at home. All you need is hot water, lukewarm water and a little patience. The whole process takes 32 minutes to finish.

Wang Zizhong is a 78-year-old farmer from Ciyu village in Shandong Province. He has devoted the past 42 years of his life to greening mountains and protecting forests together with his family. Their hard work has changed the barren mountains into beautiful landscapes.
