Xu Heng was a famous scholar (学者) and educator in the Yuan Dynasty. He was known for his honesty, integrity (正直) and good manners.
One hot summer day, Xu Heng was travelling with his friends. They walked for a long time under the burning sun, and they were all very thirsty and tired.

Have you ever heard of Yu Tong Shop? It is the only place in Guangzhou where people make traditional Cantonese pastry molds (广式糕饼模具) by hand. The shop is run by 65-year-old Yu Zhaoji. He has been making molds for over 50 years, continuing a family tradition. Yu’s great-great-grandfather started the business about 160 years ago.
For centuries, handmade molds have played an important role in making Cantonese pastries. Before handmade molds started to become less commonly used around the year 2000, Yu Tong Shop was always busy with orders, especially from the 1970s to the 1990s.
Today, there are fewer traditional Cantonese pastry mold makers. Making molds by hand is slow and requires special carving (雕刻) skills. The process makes handmade molds much more expensive than machine-made ones. “Speed is everything today,” Yu explained. “But learning this skill takes years of practice.” Although machines are faster, Yu believes they can never truly supersede human hands.
To protect traditions, Guangzhou opened its first intangible cultural heritage district (非物质文化遗产街区) in August, 2020. With the support of the government, Yu moved his shop there. Now, he introduces his skills to tourists, and he also teaches them to make molds.
