During storage, a detailed microbiological evaluation was conducted to quantify total viable (活菌) counts and specific spoilage organisms, including Pseudomonas spp., Clostridium spp., and Proteus spp. Physicochemical analyses monitored changes in pH and water activity, while bacteria growth was assessed during storage at room temperature. The scientists discovered that the CNSL-treated meat showed significantly less bacterial growth than untreated meat. The effect was strongest at higher concentrations, with a 2.0% solution providing excellent protection while maintaining meat quality.
