Many people miss the sweet,rich taste of the tomatoes they ate in childhood and wonder why
store-bought ones today have little flavor.The main reason is that modern farming has focused

A team led by Professor Hang Sanwen from the Chinese Academy of Agricultural Sciences has
found a way to bring back the delicious flavor of tomatoes without lowering production.They
discovered how to genetically "release the sugar brake"in tomatoes,making them much sweeter

-how to achieve both good quantity and good quality.
The study began with taste tests of more than 100 types of tomatoes.Scientists identified 33 key
compounds (that create flavor.They then examined these compounds in 400 tomato

49 genes linked to tomato flavor,including two that control sugar levels.
The key discovery is that turning off these two genes could raise sugar levels by up to 30%
