Cherries are one of China’s favorite fruits. This winter, you can see them in almost every fruit shop. Most of these dark red, juicy fruits come from Chile by ship. The trip takes about 30 days. Have you ever wondered how they stay fresh for so long?
The secret is a technology called Controlled Atmosphere (CA). Fruits and vegetables still “breathe” after they are picked. In a normal place, they react with the air, which makes them go bad faster. Microorganisms (微生物) in the air also make them spoil* more quickly.
