Since ancient times, food has been a base for cultures worldwide. It is important for our survival, which is why attention on food is a universal rule that connects us all. To feed our hungry brains, our ancestors invented fire and cooking, which passed digestion to culture.
In fact, a culture's food vocabulary is a window into its values and priorities. The cultural psychologist Paul Rozin has found that when French and American research participants are asked what comes to mind when thinking of fried eggs, the French say “breakfast” while Americans say “cholesterol (胆固醇)”. The French think of the cooking experience; Americans think of what is entering the bloodstream.
Sometimes, slurping (出声地吃) noodles is seen as the preferred way to interact with the delicious dish. There is a great scene in Juzo Itami's film,Tampopo (1985) where a group of women in a hotel are being taught table manners and told to eat their Italian pasta noodles slowly and quietly. Another diner sitting nearby happily is slurping his noodles and the joy he gets from audibly (声音地) and physically interacting with his food is infectious. Before they know it, even the teacher is also slurping her noodles.
Besides, specific dishes never represent an unchanging tradition. “My grandma's Egg Foo Young looks and tastes completely different from what you might find in a restaurant or in somebody else's home. After asking about her version, I realized that she learned how to make it by picking up different cooking styles as she traveled from Jiangxi, Macao, and Hong Kong,” said Shirley Ting, a Canadian researcher.
If we treat culture as a defined thing, then we can see food as an important part of culture — food practices and traditions help communicate cultural values, reproduce those values over time and across generations, and help improve a group's sense of having a distinct identity, different from other groups.

A recent study showed that eating processed red meat (like bacon or hot dogs) frequently can increase the chances of developing dementia (痴呆) by 13 percent, but replacing red meat with nuts, beans or fish can lower the risk by 20 percent.
“Dietary guidelines tend to focus on reducing risks of chronic (慢性的) conditions, while cognitive (认知的) health like dementia is less frequently discussed,” said Daniel Wang, a founding member of the Mass General Brigham health care system.
The results, published online in Neurology on 15 January, show that the dementia risk is related to an imbalance of good and bad bacteria (细菌) in our guts caused by red meat. Researchers tracked the health of 133,000 people for more than 40 years to understand how diet affects brain health. The participants were mostly nurses and other healthcare workers who regularly shared details about what they ate.
People who ate processed red meat daily were more likely to develop dementia than those who rarely ate these foods. A standard serving of red meat was about the size of a soap bar. The participants underwent standard memory tests, which revealed that each daily serving of processed meat aged the brain by about 1.6 years. Additionally, people who ate more meat, whether processed or regular, reported memory and thinking problems.
When we eat meat, our gut bacteria break it down into a substance called TMAO(Trimethylamine N-oxide). Researchers think TMAO might harm our brains by causing certain proteins to clump together — the same proteins they see in dementia. However, they still need to do more research to understand this fully.
“We need these kinds of long-term studies to understand dementia because it develops very slowly, over many years,” Dr Wang added. Choosing what we put on our plate could be a key differentiator of brain health.

Despite the fact that burgers, chips and fries are known as some of the most unhealthy food we can eat, they are still the most popular food.
There are a few reasons behind that. Firstly, junk food is generally easy to get and take with you. This convenience is a major draw for many, especially people who are always on the go. Fast-food restaurants can be found outside many schools and workplaces, providing meals in under a minute.
Secondly, junk food contains a lot of added sugar and fat. This kind of food causes our brain to send out certain chemicals, which produce the feeling of relaxation, pleasure and enjoyment. That's why such food is called “comfort food”.
Thirdly, our ancestors didn't have such easy access to the huge variety of food we come across every day. They didn't have the convenience of having food as easily as we do. So they made it a habit to eat as much as they could to survive and protect themselves from the hard natural conditions. The cave mentality (心理) is passed down to us, which makes us believe that we can never have enough food that is high in sugar and fat, no matter how crazily we eat.
Besides, when we are too worried and tired to relax, our body produces cortisol (皮质醇), which increases the sugar content in the blood, so it can be used as energy to aid in fat and carbohydrate metabolism (碳水化合物代谢). Additionally, it is also found to increase hunger. That's the reason why when we're thinking about unpleasant things, we prefer foods that are high in sugar, fat and carbohydrate, that is to say unhealthy food.
